Cookies make a for a great summer picnic dessert. No need to worry about refrigeration and transportation to a BBQ is so easy. We have a Memorial Day get together with family this year. I offered to bring a dessert. I know we will be busy the days leading up to Memorial Day because we are leaving out for vacation the next day.

To make these crinkle cookies, you will need a white cake mix, Cool-Whip, confectioners sugar, an egg, vanilla, and lots of red and blue food coloring. Whipping up the cookie dough is easy but will be a bit messy when you are making the small cookie balls. I found it best to use a tablespoon to scoop and then a spoon to push the dough into the sugar. If you try to use your hands, it is a mess. A big mess… trust me lol.  I made a couple different sizes with my dough. I tried smaller and I tried bigger. I think the tablespoon made the perfect size. Be careful not to place your cookies too close together on the prepared sheet. These cookies spread. As for coloring… I added quite a bit to achieve the bright colors I wanted. Just add coloring until you find the color you are looking for.

Ingredients need to make Red, Whit & Blue Crinkle Cookies

1 box White Cake Mix
1 beaten Egg
8 oz Whipped Topping
1 tsp Vanilla
Red Food Coloring
Blue Food Coloring
1 cup Powdered Sugar

How to Make Red, White & Blue Crinkle Cookies

Preheat oven to 350.
Line a baking sheet with parchment paper. Set aside.
In a large mixing bowl, add cake mix, egg, whipped topping and vanilla.
Beat until blended.
Transfer half of batter/dough to another bowl and add red food coloring until rich red is achieved.
Add blue food coloring to other bowl to get a nice shade of blue.
Put the powdered sugar into a small shallow bowl.
Use a tablespoon to portion the dough into the bowl of sugar (I use silicone spatula to scrape balls from spoon into bowl).
Drop one scoop at a time into powdered sugar and roll to completely coat.
Place each onto the prepared baking sheet leaving several inches between each.
Bake for 11 to 13 minutes or until cookies set.
Allow to cool on the baking sheet for 5 minutes then transfer to wire rack to finish cooling.
