Peppermint Kiss Cookies

I absolutely love these Peppermint Kiss Cookies and so will you! I promise if you like peppermint you will really enjoy this cookie recipe I am sharing today. Quick and easy and so perfect for the holidays. I have been making so many peppermint recipes but everyone seems to love them, ha ha. This cookie is a nice shortbread type cookie with lots of peppermint flavor. Then the cookie is topped off with even more peppermint (Peppermint Hershey’s Kisses, have you tried them yet?). I picked up a great deal on Hershey’s Kisses with a sale and coupon so I thought we would give these little tasty cookies a try.
Peppermint Kiss Cookies
We have had so many great sales on candy and on baking items this holiday season. You should be able to find most of the ingredients to make these Peppermint Kiss Cookies on a great sale and also there are many coupons available. So, be frugal and make sure you are saving while shopping for baking ingredients.
INGREDIENTS:
1 1/2 cup Powdered Sugar
1 cup softened Butter
1 tsp Peppermint Extract
1 tsp Vanilla Extract
1 Egg
3 cup Flour
3 Candy Canes
1 tsp Baking Powder
1/2 tsp Salt
1/2 cup chopped Candy Cane Hershey Kisses
Sugar (to roll cookies in)
36 unwrapped Candy Cane Hershey Kisses
DIRECTIONS:
Place candy canes in food processor and pulse until they are completely crushed.
Make sure you have room in your refrigerator or freezer for your cookie sheet.
Combine powdered sugar, butter, extracts and egg in large bowl.
Beat until fluffy at medium speed.
Combine flour, crushed candy canes, baking powder and salt in a separate bowl.
Add flour mixture to wet mixture and beat until well blended (mixture will be kind of dry).
Stir in chopped kisses.
Shape dough into 1 inch balls; roll in granulated sugar.
Place 1-inch apart on cookie sheet.
Bake for 10-12 minutes in 350 oven until firm up and set.
Remove from oven and immediately press a Candy Cane Kiss in the center of each cookie.
Place cookie sheet into the freezer or refrigerator to keep kisses from melting.
The only real challenge I found with these cookies was getting my refrigerator clear enough to house the cookie sheet after placing the kisses on top, ha ha! The fridge is quite full but, the peppermint kisses will begin to melt if you do not immediately place them in the fridge or the freezer. Be sure to get them in as quick as possible.

Hi! For the candy cane kisses cookies- does the recipe call for salted or UNsalted butter? It wasn’t specified in the recipe I saw.
