These Omelet Breakfast Bites are one of my favorite breakfasts to throw together. No mess, quick and simple. I like being able to toss these little Omelets into the oven and know that the kiddos can enjoy a hot breakfast on the way to school. Since Christmas break  I have been faithfully been trying to have hot food for them a couple times per week.

Omelet Breakfast Bites

These Omelet Bites require just a few items Tatar Tots, Eggs, milk, cheese and some veggies and meat if you wish. My kiddos are not fans of veggies but we are. I can custom make a couple of these Omelet Bites for each kiddo with their favorite omelet fix ins. PERFECT! I can satisfy all of them (that is not always so easy).

INGREDIENTS
36 Tater Tots
1/2 cup diced Ham
1/2 cup diced Peppers
7 Eggs
1/4 cup Milk
1/4 cup shredded Cheddar Cheese
Salt to taste
Pepper to taste

Omelet Breakfast Bites- Perfect breakfast idea for serving a crowd. Potatoes, veggies and egg. YUM!

DIRECTIONS
Preheat oven to 400.
Grease a muffin pan liberally. These tend to stick, so you can also use a cupcake liner, but add 5 minutes to 20 minute cook time.
Place 3 frozen tater tots in the bottom of each muffin tin and bake for 10 minutes.
Remove and press the tots down to form a base using a glass or measuring cup.
Return to oven and bake for 5 more minutes.
Remove from oven.
Reduce oven temperature to 350.
Top each cup with about 1/2 tablespoon of diced ham and 1/2 tablespoon of diced peppers.
Whisk together the eggs and milk and pour the mixture into each muffin tin nearly to the top.
Sprinkle each with a little shredded cheese.
Bake for 20 minutes or until egg is cooked.

I HIGHLY recommend using quite a bit of cooking spray inside your tins if not using a liner. The potatoes do like to stick. Even with some of the potato sticking you will have plenty of potato in the bottom of your Omelet bites. plus the flavor really comes through from the potato. I have made these both with and without a liner and prefer no liner. They are not quite as pretty but, I like the crispier bottom.

These Omelet Bites are perfect for on the go families! I really like that the kiddos can have eggs even when I am pressed for time in the morning. These have been a hit. I just ask each of them the night before what toppings they would like and have them ready for them to eat when they head out the door.

  2. I only had 6 eggs instead of 7 so i just used a mini muffin pan & the flat tator tots… One tot per muffin space & baked them for half the time this recipient calls for & they turned out amazing! I love them

  3. Could I cook the tater tots the night before and then leave the muffin tray in the fridge to save a bit of time in the morning?
