You will find three rich layers in these Neapolitan Brownie Cheesecake Bars. Just like Neapolitan ice cream, you will find chocolate, vanilla and strawberry layers. A fun and perfect summer time dessert.
Neapolitan Brownie Cheesecake Bars
This weekend was one of my friends birthdays. I wanted to surprise her with one of her favorite desserts which happens to be cheesecake. Brownies are also one of her favorite desserts. So why not combine the two into a fun dessert? I have been anxious to make a layered dessert that resembled Neapolitan ice cream. The colors are so fun for summer. I have thought about making cupcakes, homemade Neapolitan ice cream, cheesecake, you name it I have “thought” about it, ha ha.
Since I was needing this dessert so quickly, I checked to see what I had on hand in my pantry and fridge. I had cream cheese and I had a brownie mix. That’s when the thought crossed my mind to make Neapolitan Brownie Cheesecake Bars. I didn’t have strawberries but did not want to have to make another run to the grocery. But, next time I make these, I will add strawberries to my icing. I suggest you either purchase store bought strawberry icing or add some fresh strawberries to your homemade icing if you want the flavors to resemble Neapolitan strawberry flavors.
These Neapolitan Brownie Cheesecake Bars were like bits of heaven. I sliced them up and presented them on a small disposable plate with some cello-wrap and a bow. Super simple birthday gift. Plus, I had the scraps to snack on myself, ha ha.
The ingredients needed for these cheesecake bars are so simple. You can use a store bought brownie mix or make your own homemade brownies, cream cheese, strawberries if you would like to add them for a bit of additional flavor, and a few other simple staples.
INGREDIENTS
1 box Brownie Mix + Ingredients from box
16 oz Cream Cheese
2 Eggs
1/2 cup Sugar
1/2 cup softened Butter
6 cups Powdered Sugar
1/2 cup Strawberry Preserves (optional)
4-5 drops Red Food Coloring
DIRECTIONS
Preheat oven to 350.
Grease a 9×13 pan and set aside.
Prepare brownie batter according to box directions.
Pour into prepared pan and bake for 20 minutes or until top appears completely set.
Remove from oven and allow to cool for 30 minutes.
Cream together cream cheese, sugar and eggs until well blended.
Spread cream cheese mixture evenly over brownie layer.
Bake for 35 – 40 minutes or until cheesecake layer is set.
Remove from oven and allow to cool at least 30 minutes until top is no longer warm to the touch.
Beat butter (and strawberry preserves if using) while slowly add in powdered sugar.
Add in food coloring to acheive pink color, then whip to get uniform color.
Frost cheesecake layer by spreading frosting with a spatula to completely cover.
Refrigerate at least 2 hours before serving.
These bars had super rich flavors. The addition of the strawberries would have been nice but seriously not needed. The buttercream icing combined with the cheesecake and brownie layers was absolutely delish.
