Warm and comforting potato casseroles are great during the colder months. These Mississippi Mud Potatoes are great for busy weeknights or for Thanksgiving and Christmas dinner. Since they require just a few ingredients and a small amount of prep, they are so easy to make.

Potatoes are pretty boring when they are not topped or mixed with seasonings, butter or cheese. This Mississippi Mud Potato Recipe is loaded with all of those as well as an addition of mayo. Yes… it may sound odd at first but, mayonnaise adds a bit of zing (like sour cream does). My daughter hats mayo but loves this potato casserole.
Cheesy Mississippi Mud Potatoes are great for a holiday side dish. They are also great for breakfast or brunch. If you have picky eaters, you can omit the onion. I find it really adds a bit of flavor.
Some may think it is odd that we cook the green onions in our Mississippi Mud Potatoes recipe. But, the green onion softens with the potatoes in the oven and really adds flavor to the potatoes themselves. We LOVE green onions so, we also top with raw green onion when serving.
Mississippi Mud Potatoes Ingredients
You’re only going to need a handful of ingredients to whip up this Mississippi Mud Potatoes Recipe for your family. If you like making homemade baked potatoes, then a lot of these ingredients should look pretty familiar- it’s almost like making a baked potato casserole. In case you’re missing anything, here’s all you need:
- Potatoes – Yukon Gold potatoes or Russet work best for this recipe. Looking to save time? Go ahead and that thaw bagged frozen potatoes if you would like.
- Bacon – For best results, you’ll want to get some raw, thick-cut bacon, chop it into tiny pieces, and cook it yourself. You might be able to get away with pre-cooked bacon slices or bacon bits, but we think it works best this way.
- Green Onion – you could also use any white or yellow onion.
- Garlic – Minced garlic from the jar works fine here.
- Cheese – We just went with some freshly shredded cheddar cheese. You’re more than welcome to experiment with all sorts of different pepper jack or Monterey Jack cheeses if you want. Avoid the store-bought pre-shredded cheese, it will not melt or taste as well.
- Mayonnaise – The secret ingredient for Mississippi Mud Potatoes is mayonnaise: we used Duke’s Mayonnaise. You can easily use your favorite mayonnaise brands here, grab some Miracle Whip, or use sour cream instead of mayonnaise.

How to make Mississippi Mud Potatoes
What’s so great about these Mississippi Mud Potatoes is that they’re such an easy potato side dish to make! Once you’ve got everything sliced, diced, and mixed up, the oven will do most of the work for you. For a quick step-by-step guide, here’s all you’ll have to do:
- Start by peeling potatoes and cutting them into smaller, bite-sized pieces.
- Set cut potatoes aside and cut bacon into small strips. Cook on the stovetop with your preferred method until fully-cooked and lightly crisped.
- Thinly slice green onions before adding to a bowl with the other prepared Cheesy Mud Potatoes ingredients. Use a rubber spatula or a large spoon to fold and mix together until thoroughly combined and well-coated with the mayo and cheese.
- Transfer the potato mixture to a 9×13 casserole or baking dish. Cook in a preheated 325 degree oven for 1 hour. Remove from oven and top with reserved cheese. Bake for another 30 minutes or until potatoes become tender.
Storage / Freezing
Storage: Storing your leftover Mississippi Mud Potatoes is pretty easy- you can even keep them in the baking dish if you want! Either cover the dish with plastic wrap and/or foil or transfer your leftovers to an airtight container and move to the fridge. They should keep for a good 3-5 days.
Freezing: If you’re aiming for longer-term storage, the freezer is another option. Let your Cheesy Potatoes cool completely before wrapping the dish with foil or transferring to freezer bags. Keep in the freezer for 1-2 months- let thaw in the fridge overnight before reheating in the oven for best results.

Ingredients
- 2 1/2 lbs Potatoes, 6-7 potatoes
- 12 oz Bacon
- 2 tbsp Minced Garlic
- 1 cup Mayonnaise
- 12 oz shredded Cheddar Cheese, divided
- 4 Green Onions
Instructions
- Peel and dice potatoes into roughly 1/2″ pieces. Set aside.
- Cut bacon into strips and cook until crispy. Remove bacon and set aside.
- Preheat oven to 325.
- Thinly slice the green onions and set aside.
- In a large bowl, combine the potatoes, bacon, green onions, garlic, mayonnaise and 8 ounces of cheese. Stir until ingredients are well mixed and coated.
- Transfer to a 13×9″ baking dish and bake for 1 hour.
- Top with remaining 4 ounces of cheese and bake for 30 minutes more.
