Mississippi Mud Potatoes

Mississippi Mud Potatoes are loaded with crispy bacon, cheese, green onion, garlic and mayonnaise. This cheesy potato casserole recipe is full of delicious flavor. Make them for breakfast, brunch or dinner.

Ingredients

  • 2 1/2 lbs Potatoes 6-7 potatoes
  • 12 oz Bacon
  • 2 tbsp Minced Garlic
  • 1 cup Mayonnaise
  • 12 oz shredded Cheddar Cheese divided
  • 4 Green Onions

Instructions

  • Peel and dice potatoes into roughly 1/2" pieces. Set aside.
  • Cut bacon into strips and cook until crispy. Remove bacon and set aside.
  • Preheat oven to 325.
  • Thinly slice the green onions and set aside.
  • In a large bowl, combine the potatoes, bacon, green onions, garlic, mayonnaise and 8 ounces of cheese. Stir until ingredients are well mixed and coated.
  • Transfer to a 13x9" baking dish and bake for 1 hour.
  • Top with remaining 4 ounces of cheese and bake for 30 minutes more.

Notes

For the BEST Mississippi Mud Potatoes you will want to be sure to fully drain your bacon and pat dry with a paper towel.
