Of course, you gotta have the classics- some hamburgers, some hot dogs- but you need to have some good sides as well. Watermelon Salad with feta cheese on a spoon

Watermelon is a classic summer fruit that many folks enjoy snacking on as-is, but it also makes for a delicious base for this fun, funky salad. The base of this Greek Watermelon Salad is watermelon- obviously- but also some fresh cucumber and some herbs like mint and basil. Add to this a delicious lime and honey salad dressing and a topping of crumbled feta and you’ve got a tasty salad with a bit of a salty punch on top!

Ingredients for Mediterranean Salad

  • Watermelon – Watermelon chunks will work fine here. You could also use a small ice cream scoop to scoop out small balls of watermelon for an interesting look!
  • Cucumber – Give this a quick dice- no need to go super-fine. We prefer English cucumber for this recipe.
  • Mint
  • Basil
  • Feta – If you are dead-set on not using feta, you do have a few feta substitutes you can use. Some go-tos are cottage cheese or goat’s cheese but halloumi might be the best pick if you can find it. It’s Greek, not as salty, a little sweet too- for people who hate feta, it’ll probably be your best choice.

  • Olive Oil
  • Lime Juice
  • Honey
  • Salt & Pepper – To Taste.

How to make Watermelon Salad

Prep for this salad is very simple. Here’s all you’ll need to do:
  1. Chop or dice all the salad ingredients, minus the feta, before mixing together in a large bowl.
  2. Whisk together the dressing ingredients and season to taste with salt & pepper.
  3. Add your dressing to the salad, toss to coat, and then top with crumbled feta before serving.

Start by getting everything chopped and diced to your liking. We prefer bigger chunks of watermelon and a rough dice on the cucumber. For the herbs, we usually end up cutting them into ribbons. Add those all to a bowl and then move on to the dressing: that’ll be as simple as whisking all the dressing ingredients together in a small bowl. Season to taste before putting everything together.

With the dressing all mixed up, pour it evenly over the salad ingredients in the bowl. Give that a quick toss to coat everything. From here, all that’s left is hitting your Watermelon Salad with a topping of crumbled feta cheese- or whatever feta substitute you’re using, if any. Enjoy!

How long does Watermelon Salad last?

This salad should keep for about 3-4 days. However, the mint will brown fairly quick and the cucumber and melon start to lose their crunch after about 2 days. With that in mind, we would not make this salad ahead of time- just know you’re leftovers are safe to eat if you have any!

Mediterranean Watermelon Salad

Ingredients 

  • 2 cup cubed Watermelon
  • 1 cup diced Cucumber, about half of a English
  • 2 tbsp Mint, chopped
  • 2 tbsp Basil, chopped
  • 1/3 cup Feta , crumbled

Dressing:

  • 2 tbsp Olive Oil
  • 2 tbsp Lime Juice
  • 1 tbsp Honey
  • Salt and Pepper to taste

Instructions 

  • In a large bowl, combine the watermelon, cucumber, basil, and mint.
  • In a small container, whisk together the olive oil, lime juice, and honey.
  • Season with salt and pepper to taste.
  • Drizzle the dressing over the salad and toss to coat.
  • Sprinkle with feta cheese and serve.

Notes

Use fresh basil and mint for the best flavor.

  1. This recipe goes together fairly quickly and was the hit of the cookout! So fresh tasting for and good!

  2. Your notes show “use fresh mint and fresh oregano”. There’s no where in recipe showing this ingredient. I believe it’s fresh mint and fresh basil? I will be trying tonight. Looks yummy!
