These Old-Fashioned Oat Lace Cookies also known as Laceys are a one of a kind. They’re thin, crispy, delicate, sweet and delicious. Make them for a unique Christmas cookie or all year long, you’ll love them dipped in morning coffee.

Let me start with describing these Lace Cookies with one word… ADDICTIVE. I challenge you to eat just one. The flavor of sweet brown sugar, browned butter, cinnamon, vanilla and oats create a flavor explosion in every bite. The crisp crunchy texture is as addicting as a potato chip. The beautiful Lacey, see-through appearance is what gives this cookie recipe it’s name.

These Lace Cookies are a perfect addition to Christmas Cookie Trays or Tins. The unique look will have everyone wanting to give them a try. Make extra because they will be gone in a flash. Dip them in your morning coffee, you will thank me later.

This lace cookie recipe is so incredibly easy to make. Unlike other cookie dough, Lacey cookie dough is made in a saucepan on the stovetop. And, they’re made with pantry ingredients you most likely have on hand.
Lace cookies with Oatmeal is my choice when making these classic cookies. Others will use nuts, almond flour etc. The original old fashioned Lacey Cookies like grandma use to make include oats. They provide the best texture for this cookie.

Many Lace Cookie recipes do not use browned butter. I find the browned butter flavor profile makes The BEST Lace Cookie. Don’t skip that step, it’s just a couple minutes of time. My lace cooke recipe also include a touch of cinnamon which gives the perfect amount of warmth.
Lace Cookies, you will only use 1 teaspoon of dough. The dough will SPREAD, caramelize and crisp when baking. Use a silicone lined baking sheet to prevent sticking if at all possible. This method results in a perfect lace cookie every time. If using parchment you allow to COMPLETELY Cool.

These Old Fashioned Lace Cookies don’t need many ingredients to come together. They’re loaded up with oats, sugar, and plenty of butter- just a few other pantry staple ingredients and some spices and you’re ready to make the most addictive cookies! Here’s all the ingredients you need:

Ingredients to make Lace Cookies
  • Quick Oats – Do not confuse these with instant oatmeal! We want these quick oats because they’re just soft enough while still giving a good cookie bite. Something like old fashioned oats are going to be a bit too chewy and won’t let our lacey cookies spread as well.
  • Flour – All-purpose flour is fine here.
  • Salt
  • Cinnamon – gives these cookies a warm comforting flavor.
  • Baking Powder – Make sure you don’t accidentally use baking soda instead of baking powder! Fresh is BEST!
  • Butter – Warm softened butter or cold butter doesn’t matter too much here, since we’re melting butter for browed butter anyways.
  • Brown Sugar – Use light brown sugar here. It’s going to give us the color and caramel flavor that we want.
  • Egg – room temperature is always BEST!
  • Vanilla Extract

How to make Lace Cookies

What’s even better is that Oat Lace Cookies are super easy to make too. Once you’ve got some Lace Cookie Dough whipped together, you’re not that far from some thin chewy oatmeal cookies that you’re going to live! In case you need some extra help or a visual guide, read on for our Easy Lace Cookies Recipe:

  • First, we have to prep dry ingredients for later. To a medium-to-large mixing bowl, add oats, flour, salt, cinnamon, and baking powder. Whisk to combine and set aside.

  • Grab a medium pot and set it on the stovetop over medium heat. Add butter and start melting.

  • We will be browning butter for some extra nutty flavors. Cook until nutty aroma, frothy and medium brown in appearance.

  • Add brown sugar and stir to combine and help melt sugars. Remove from heat and allow to cool for about 10 minutes. We will be adding egg and you will not want it to scramble.

  • Crack egg in seperate bowl and beat well. Add to pot with butter and sugar. Mix well to combine.

  • Finally, add vanilla extract and stir in.

  • Now we can add dry ingredients to wet ingredients in the pot. Stir together well to combine into our Lace Cookie Dough. Now, allow the ingredients to mingle and thicken for about 10 minutes.

  • Line baking sheet with Silpat. A Silicone baking mat is best for this recipe. If you have one use it. Some brands of parchment paper will cause the cookie to stick to the paper. Dollop 1 tsp of cookie dough onto baking sheet, set about 3 inches apart from each other.

  • Transfer baking sheet to awaiting 350 degree oven. Bake for about 8 minutes until Lace Cookies flatten out and edges are golden brown. Remove from oven, let Lace Cookies cool completely before removing from baking sheet with spatula and serving.

Storage / Freezing

Storage: Fresh Cookies taste the best but it’s still worth it to store leftover Lacey Cookies if you have them. Transfer to an airtight container or Ziploc bag and optionally seperate layers of cookies with parchment to prevent sticking. Keep in the fridge for 1-2 weeks- they’ll keep at room temperature for up to a week.

Freezing: When it comes to freezing Laced Cookies, the drier you can keep them, the better. Freeze cookies on a parchment-lined baking sheet for 45 minutes before transferring to a freezer bag or freezer-safe container- make sure you squeeze excess air out. Keep them frozen for up to 3 months and let thaw at room temperature and consider reheating in a low oven before serving.

Tips for the BEST Lace Cookies

  • Use Quick Cooking Oats- other types of oatmeal will not work with this recipe.
  • Be cautious to not “over brown” the butter. Cook the butter until fragrant with a nutty smell, a bit frothy and you notice a medium brown appearance.
  • These cookies will SPREAD at about the 4 minute mark. Be sure to leave enough space between cookies.
  • Lace Cookies need to cool completely on the baking sheet before removing. They will stick if removing early.

Lace Cookies

Servings: 10 cookies

Ingredients 

  • 1 cup Quick Oats
  • 3 tbsp Flour
  • 1/4 tsp Salt
  • 1/4 tsp Cinnamon
  • 1/4 tsp Baking Powder
  • 1/2 cup Butter
  • 1/4 cup Brown Sugar
  • 1 Egg, beaten
  • 1 tsp Vanilla Extract

Instructions 

  • Preheat the oven to 350.
  • Line a baking sheet with silicone mat. You can use parchment paper but cookies are more prone to sticking. Set aside.
  • In a medium bowl, whisk together oats, flour, salt, cinnamon and baking powder. Set aside.
  • In a medium pot over medium heat, melt butter and cook until butter is medium brown and frothy.
  • Add brown sugar and stir to combine.
  • Remove from heat and allow to cool for 10 minutes.
  • Add beaten egg and mix well.
  • Add vanilla and stir.
  • Add prepared dry ingredients and stir to combine.
  • Allow to sit for 10 minutes
  • Dollop 1 teaspoon of dough about 3" apart onto the prepared baking sheet.
  • Bake about 8 minutes until edges are golden brown.
  • Let cool completely before moving from sheet.
