Lace Cookies
These Old-Fashioned Oat Lace Cookies also known as Laceys are a one of a kind. They're thin, crispy, delicate, sweet and delicious. Make them for a unique Christmas cookie or all year long, you'll love them dipped in morning coffee.

- 1 cup Quick Oats
- 3 tbsp Flour
- 1/4 tsp Salt
- 1/4 tsp Cinnamon
- 1/4 tsp Baking Powder
- 1/2 cup Butter
- 1/4 cup Brown Sugar
- 1 Egg beaten
- 1 tsp Vanilla Extract
Preheat the oven to 350.
Line a baking sheet with silicone mat. You can use parchment paper but cookies are more prone to sticking. Set aside.
In a medium bowl, whisk together oats, flour, salt, cinnamon and baking powder. Set aside.
In a medium pot over medium heat, melt butter and cook until butter is medium brown and frothy.
Add brown sugar and stir to combine.
Remove from heat and allow to cool for 10 minutes.
Add beaten egg and mix well.
Add vanilla and stir.
Add prepared dry ingredients and stir to combine.
Allow to sit for 10 minutes
Dollop 1 teaspoon of dough about 3" apart onto the prepared baking sheet.
Bake about 8 minutes until edges are golden brown.
Let cool completely before moving from sheet.
- Use Quick Cooking Oats- other types of oatmeal will not work with this recipe.
- Be cautious to not "over brown" the butter. Cook the butter until fragrant with a nutty smell, a bit frothy and you notice a medium brown appearance.
- These cookies will SPREAD at about the 4 minute mark. Be sure to leave enough space between cookies.
- Lace Cookies need to cool completely on the baking sheet before removing. They will stick if removing early.
