We’re big fans of beef soups in our house especially, and this Hamburger Soup recipe is definitely one of our latest favorites.
We’ve loaded this soup with ground beef, chopped potatoes, and some simple frozen mixed veggies. The result is this easy, filling, and comforting beef dish! It’s perfect as an easy, low-effort dinner idea that you could easily make on the cheap. Like any good soup, it should also store very well in the fridge or freezer- who doesn’t love leftovers!

Recipe for Hamburger Soup
Prep your ingredients before really getting into this recipe. First, finely dice your onion and then set aside for later.
Similarly, chop your potatoes into small chunks. No need to worry about them oxidizing or getting brown- we’ll be stewing them soon enough!
Next up, we need to get some of our ingredients browned and cooked. To the bottom of a stockpot or large dutch oven, add your garlic, onion, and ground beef. Turn up the heat and allow your beef and onions to brown. Cook them until no pink remains in your ground beef.
Once that’s all cooked, get any fat drained off before adding some more ingredients. Add all of your remaining ingredients except for your mixed veggies, bring the mixture to a simmer, and let cook covered for about 10 minutes.
After that initial 10 minute cook time passes, it’s time to add in your veggies. Stir those in and keep your soup at a simmer.
Your soup is ready when the potatoes have become nice and tender. A quick poke with a paring knife will let you know if they’re done- if it stabs in and pulls out with no resistance, your potatoes are finished cooking. This should take about 20 minutes.
Grab a ladle and dish yourself out a generous portion! This soup especially is great with a side of some nice, crusty bread or topped with a little sprinkle of shredded cheese maybe. However you serve it up, we hope you enjoy!

Ingredients
- 1 lb Ground Beef
- 3 Potatoes, peeled and diced
- 1 Onion, finely diced
- 1 tbsp minced Garlic
- 3 cup Beef Broth
- 24 oz Italian/Spaghetti Sauce
- 14.5 oz Diced Tomatoes
- 2 tsp Worcestershire Sauce
- 1 teaspoon Italian seasoning
- 1 Bay Leaf
- 1/4 tsp Crushed Red Pepper Flake0
- Salt and Pepper to taste
- 24 oz Frozen Mixed Vegetables, thawed
Instructions
- In a large dutch oven, cook onion, ground beef and garlic until browned. Drain fat.
- Add all remaining ingredients, except mixed vegetables.
- Bring to a simmer.
- Cover and cook 10 minutes.
- Stir in mixed vegetables.
- Simmer until potatoes are tender, about 20 minutes.
