I’m always on the lookout for some great appetizer recipes to serve up at my next little get-together. The holiday season has opportunities for all sorts of parties- Thanksgiving, Christmas, and New Years! With seasonal parties comes seasonal appetizers, and I think I found another delicious little snack. These Brie Cranberry Bites are going to be a favorite!
These are really easy to make and only need 4 ingredients- plus a bit of flour. At its core, we have some puff pastry- which I could already eat on its own it’s so good. Next, some sweet cranberry sauce with just a touch of acidity. For an extra cheesy treat, we drop a bit of brie in there. Finally, just a hint of rosemary for seasoning.
All these ingredients come together to make a delicious cranberry appetizers everyone’s going to love. Expect an empty plate real quick once you serve this cranberry brie appetizer up! We hope you enjoy!

How to prepare our Brie Bites Recipe
To start this recipe, we’ll first want to get our puff pastry rolled out and portioned. To do that, flour up a cutting board before dropping a sheet of puff pastry onto it and giving it a light dusting of flour. Flour up a rolling pin before rolling over the puff pastry, just to smooth it out.
Once you’ve rolled out your pastry, start cutting it into small squares. You’ll want these squares to fit in the bottoms of heavily-greased mini muffin tins with just a bit of pastry going up the sides. my squares were about 1 and 1/4 inches.
Before tossing that pastry into an awaiting oven, we’re going to also add our cranberry sauce. Drop-in some generous teaspoons of cranberry sauce into each pastry-lined tin. Now transfer your cranberry and pastry to a 375-degree oven.
Let the pastry and cranberry cook for about 12 minutes- until the pastry has started to puff up significantly. Once you’ve pulled that from the oven, we can add our last couple of ingredients. First, drop in a very small piece of your brie. If you add too much, they will not be as pretty.
Then sprinkle in some rosemary before returning your brie bites to the oven.
Your bites should only need a few more minutes in oven to finish cooking. Give them probably another 2 minutes before pulling from the oven.
As delicious as these things look and smell, you need to wait just a little bit before eating these. That cranberry sauce gets really hot!
Once those have cooled from a blistering hot to a delightfully warm, then you should be good to plate these up for any awaiting guests. Hope you enjoy!
Cranberry Brie Bites
Ingredients
- 1 Puff Pastry Sheet
- 4 oz Brie Cheese
- 3/4 cup Whole Berry Cranberry Sauce
- 1 Rosemary sprig
Instructions
- Preheat oven to 375.
- Heavily grease mini muffin tin.
- Spread a little flour out onto your counter.
- Cut pastry sheet into 36 squares (about 1 3/4").
- Place squares into muffin tin slots.
- Top each with a teaspoon of cranberry sauce.
- Bake for 12 minutes.
- Cut brie into small pieces and place on top of cranberry and top with a couple leaves of rosemary.
- Bake another 2 minutes to melt brie.
- Serve warm.
