CopyCat Cracker Barrel Coke Cake Recipe
Since my hubby is a HUGE Coke fan (and are all my kiddos), I set out to make a CopyCat Cracker Barrel Coke Cake today. I will have to say this is some of the BEST chocolate cake I have had in a long time. If you have never enjoyed a piece of Cracker Barrel Coke Cake, make yours at home and save some $$’s. You will be in Coca-Cola Cake heaven before you know it, ha ha.
I enjoyed one piece of this yummy Coke Cake this afternoon after taking picks. I mentioned yesterday when I listed my Banana Split Pie Recipe how worried I am about eating all these yummy desserts. I know I am putting on some weight. But wow, these desserts I have made up for my family are just so good. I can resist ha ha!
Cooking with sodas adds that punch of flavor. We enjoy Slow Cooker Coke Ribs and Slow Cooker Dr Pepper Pulled Pork quite often since I have shared them with you.
The Ingredient list looks a bit overwhelming but trust me this cake is SUPER quick to throw together. I just made sure I gathered all of the ingredients needed ahead of time. I am not one for doing long drawn out recipes and this one did not seem the slightest bit time or effort consuming.
INGREDIENTS
CAKE:
1/2 cup Butter
1/2 cup Vegetable Oil
1 cup Coca-Cola
2 cup Sugar
2 cup Flour
2 Eggs
3/4 cup Unsweetened Cocoa Powder
1 tsp Baking Soda
1/2 cup Buttermilk (or 1/2 cup Milk and 1 tsp Lemon Juice)
2 tsp Vanilla
FROSTING:
3 cups powdered sugar
1/2 cup Butter
1/4 cup Coca-Cola
1/2 cup Unsweetened Cocoa Powder
1/4 cup Chocolate Syrup
1 tsp Vanilla
DIRECTIONS
Grease and flour a 13×9 cake pan.
Preheat oven to 350.
In a saucepan, bring 1/2 cup butter, 1 cup Coke, and oil to a boil.
Combine flour and sugar. Add to saucepan and beat.
Remove from heat.
Add remain cake ingredients. Mix well and pour into prepared pan.
Bake fro 30 minutes or until toothpick inserted in center comes out clean.
Cream butter and 1/2 cup cocoa in a large bowl.
Add in 1/4 cup Coke, chocolate syrup, and 1 tsp vanilla.
Beat in powdered sugar 1/2 cup at a time, scraping down the sides frequently.
If frosting is too dry, add a little Coke to thin.
Frost the cake while it is still warm.
Serve with Vanilla Ice Cream.

First , I love a great coke cola chocolate cake, that being said I the recipe needs to be be update. Read thru recipe at least 2 times before assembling cake , each step moves very fast. Secondly make sure you take you butter out of the fridge and soften before making icing. This step should have been included in the icing recipe. You make a mess if you donโt, cocoa powder will fly everywhere.I havenโt tasted the cake yet because I am cleaning up cocoa powder from my kitchen.
I dont normally leave a review but this was so bad i had to comment. There was was too much cocoa in the cake….Overwhelming!! The frosting tasted terrible. I thought that the syrup would be a welcome addition to the icing. It was not. Wasted my time and money.
I HAVE BEEN MAKING THIS CAKE FOR 8 YEARS NOW AND IT NEVER LET’S ANY OCCASION I MAKE IT FOR DOWN. PEOPLE ALWAYS ASK ME FOR THE RECIPE. AND I GLADLY SHARE.
Just doubled the recipe to try it. Wouldnโt want to poison my family with something I havenโt tried! Not exactly like CB but it is still super tasty! I ate a piece for breakfast. And lunch.
They forgot to add the marshmellows to the recipe

Wow! This cake is awesome! I made it to take to a friend whose grandmother had passed away, and I was so impressed with how tender and chocolatey it turned out. that I made one for my family as well, and we were NOT disappointed! This is a keeper – so rich and moist – it may just be the best chocolate cake I have ever tried, and the recipe was pretty easy. I used Barry Callebaut Extra Brute baking cocoa, and the chocolate flavor was fabulous! Thank you for such a wonderful recipe!

Tried this recipe and I feel like I cooked the Coca-Cola and butter too long, but the frosting is amazing. I didn’t have chocolate syrup but I had Hershey’s fudge topping that I substituted and it was perfect.

I was wondering. Do you use regular Coke that has corn syrup in it or Mexican Coke with sugar? Just wondering if that matters. I’d probably just buy the regular U.S. version with the corn syrup.
I used to work at CB. You only need to add mini marshmallows to your recipe for the cake!
