Cilantro Lime Grilled Chicken

The marinade for this Cilantro Lime Grilled Chicken is so simple to make! We marinade our chicken breasts in cilantro, lime, and a few other ingredients. Then we toss them on the grill to cook them up. Perfect chicken recipe for summer grilling.
Cilantro Lime Grilled Chicken
During the summer months, we tend to grill just about every evening. We make the traditional burgers and dogs, ribs, sausages, and chicken quite often. Plain barbecued chicken is great but can get rather boring if we have it to frequently.
This past weekend, the weather was quite nice. A bit of chill in the air but the sun was shining. It put us in a grilling sort of mood. I had quite a bit of chicken on hand so I through together this amazing Cilantro Lime Marinade for our chicken breasts. The flavor from both the lime and the cilantro really took our breasts from bland to grand. I knew I would like the flavors because they are quite similar to my CopyCat Chipotle Cilantro Lime Rice Recipe!
Have you seen the handy plastic bag holders that are all the craze? I purchased myself two of Clip Storage Bag Holders from Amazon.com. They are great for making marinades and also freezer cookie! Such a handy product. Get yourself some if you have yet to do so!
To make your marinade, you will need just a few ingredients. Toss everything in a baggie and let the chicken soak in all the flavors. I let my chicken marinade over night. A couple hours should be plenty though if you are in a rush. After allowing the marinade to do its trick, we toss it on the grill.
Serve your chicken breasts with some salsa and chips for a simple dinner. Slice your breasts and add to a green salad or make some chicken burritos. This Cilantro Lime Grilled Chicken is versatile and could make many different dishes.
INGREDIENTS
2 1/2 lb Chicken Breast, cut in half
2 Limes, zested and juiced
3 tbsp Olive Oil
1 bunch Cilantro leaves, chopped
1/2 tsp minced Garlic
1/2 tsp Crushed Red Pepper Flakes
1/2 tsp Sugar
1/2 tsp Salt
1/2 tsp Pepper
DIRECTIONS
Place chicken breasts into 1 gallon zippered freezer bag.
Add lime juice, olive oil, cilantro, garlic, pepper flakes, zest, sugar, salt and pepper.
Seal bag. Shake and squeeze to mix and coat.
Refrigerate for at least one hour or up to overnight.
Grill until internal temperature reaches 165 degrees.
