Chunky Monkey Brownies

These Chunky Monkey Brownies are filled with all the same flavors you will find in the popular Ben & Jerry’s Ice Cream. Lots of chocolate flavors, chocolate chips, banana and walnuts.
Chunky Monkey Brownies
Are you a fan of chocolate and banana desserts? We are! During the summer months, we will enjoy Frozen Chocolate Dipped Bananas frequently. The flavors together are just perfect. Last week, I finally splurged and bought myself a small pint of Ben & Jerry’s Chunk Monkey Ice Cream. I am not sure why but the name of this expensive ice cream made me smile and was just what I needed after a long day, ha ha.
Have you ever tired Chunky Monkey Ice Cream? The stuff is out of this world good. Ice cream loaded with chocolate pieces, banana and walnut pieces. YUMMY!
These Chunky Monkey Brownies were totally inspired by my ice cream. As I was enjoying each bite, I kept trying to think of the perfect dessert with chocolate and banana. Obviously with all that brainstorming, I decided on a brownie. I knew I was wanting a icing that was more like banana cream so why not use banana pudding to kick the banana flavor in overdrive? The chocolate and the walnuts were obvious so we added them in too!
To make your own fun Chunky Monkey Brownies at home you will just need to grab a few staples from your pantry, some banana pudding, heavy cream, chocolate chips and walnuts.
INGREDIENTS
Brownies:
1/2 cup melted Butter
1 cup Sugar
2 Eggs
1/2 cup Chocolate Chips
1 tsp Vanilla
1/3 cup Cocoa Powder
1/2 cup Flour
1/4 tsp Salt
1/4 tsp Baking Powder
Topping:
16 oz Heavy Cream
1 box (5 oz) Banana Creme Pudding mix
1/2 cup Powdered Sugar
1/4 cup chopped Walnuts
1/4 cup Chocolate Chips
DIRECTIONS
Preheat oven to 350.
Grease an 8×8″ pan and dust with flour.
Whisk together cocoa, flour, salt and baking powder.
In a sepaarate bow, combine melted butter, sugar, eggs, and vanilla. Mix to combine.
Beat dry ingredients into butter mixture.
Fold chocolate chips into batter.
Spread batter into prepared pan.
Bake 25 to 30 minutes.
Allow to cool.
Whip heavy cream until soft peaks form.
Whip in powdered sugar and pudding mix
Spread topping over cooled brownies.
Garnish by sprinkling with walnuts and chocolate chips.
Refrigerate until ready to serve.
These were by far my favorite brownies lately. The Neapolitan Brownies I made for my friends birthday were a VERY close second though. I guess I am having a brownie addiction this week, ha ha!
