Breakfast Crescent Roll Casserole
Nothing quite beats a delicious filling breakfast first thing in the morning. We’re a family that’s big on breakfast: we all need something to eat pretty soon after we wake up and there’s usually a rush to make our favorite breakfast recipes while the stovetop’s open. Instead of having everyone argue and fight over who gets to make their fried or scrambled eggs first, I decided we should all share a breakfast for one morning. That’s when I gave this Breakfast Crescent Roll Casserole a try.
This tasty Breakfast Casserole squeezes in a little bit of everything that makes breakfast tasty. A crisp, crescent roll crust topped with some eggs with plenty of ham, peppers, and onions tossed in- and don’t forget about the cheese! It’s a who’s-who of all the parts of a delicious balanced breakfast all tossed into one easy breakfast recipe. It makes plenty too, so there’s enough to go around!
I love crescent roll breakfast recipes like this one and you can even swap some of the ingredients out if you’d like. Use some crumbled breakfast sausage instead of ham, or top the casserole off with some pepperjack for a bit of a spicy bite. Crescent Roll Dough – Pillsbury Crescents are your safest bet here.

Ham – Ham works but feel free to try other meat fillings. Maybe make a sausage and crescent roll casserole? Bacon could also work too.

Cheese – We like a nice sharp cheddar when we’re doing breakfast recipes.

Bell Peppers & Onions – We forgot to put these in the picture, but we love adding peppers and onions to recipes like this Breakfast Crescent Roll Casserole. You can use fresh bell peppers and onions but we like to use the frozen bell peppers & onion bags: cook them in the microwave for about a minute and chop them a bit finer before adding them.

How to make Crescent Roll Casserole

Prep ingredients by blind baking crescent roll crust, shredding cheese, dicing ham, cooking peppers & onions, and beating eggs.

Add ham and peppers to baked crust and top with beaten eggs and cheese.

Bake assembled casserole at 350 degrees for 25 minutes.
Grease a 9×13 baking dish or casserole dish, open your crescent roll dough, and unroll it into the dish. Press the dough into the dish and try to smooth out the perforations. Once shaped to the dish, toss into a 350 degree oven for about 10 minutes to “blind bake.” While that bakes, prep the other ingredients: shred the cheese and dice the ham.
If using peppers, onions or other veggies cook them and set aside. Crack eggs into a bowl or measuring cup and beat together with milk.
At this point, the crust should have crisped up a bit. Remove from the oven and let cool for a few minutes.
Now we can start assembling the casserole. Start with the ham- or whatever meat you’re using in your casserole.
Add in your peppers & onions next.
Lastly, top off with your beaten eggs and shredded cheese.
All that’s left now is to bake the assembled casserole. Return to a 350 degree oven and let it bake. It’ll take about 25 minutes- maybe 30- for the eggs to bake. To check for doneness, poke a knife into the middle: if it pulls clean without any wet egg on it, your casserole is done.
Let your finished Breakfast Crescent Roll Casserole cool for a minute or two before serving warm. If you have any leftovers, keep in an airtight container in the fridge for up to 3 days and reheat in the microwave. Enjoy!
Breakfast Crescent Roll Casserole
Ingredients
- 1 can Crescent Roll Dough
- 1 1/2 cup diced Ham
- 1 1/2 cup shredded Cheddar Cheese
- 6 Eggs
- 1/4 cup Milk
- 1/4 cup Bell Pepper, diced
- 1/4 cup Onion, diced
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 350.
- Lightly spray 9x13" baking dish with non-stick spray.
- Unroll crescent dough and pinch perforations to make a single sheet.
- Place in bottom of prepared baking dish.
- Prebake for 10 minutes.
- Evenly spread the ham over the prebaked dough.
- Place onion and pepper in a microwave safe container and microwave for 90 seconds.
- Spread onion and pepper mixture over the dough.
- In a bowl, whisk together the eggs, milk, salt and pepper.
- Pour egg mixture over the top of the casserole
- Sprinkle cheese on top.
- Bake at 350 degrees for 25-30 minutes until eggs are set.
