One of our favorite meals happens to be a filet mignon with bernaise sauce, a side of mashed potatoes, and bacon wrapped asparagus. We make this meal for most every holiday family dinner we have. We LOVE IT!.

Asparagus is perfect all year long. During the summer months, I always make so many different veggie side dishes. We were not enjoying fillet mignon this past week because the grocery budget couldn’t squeeze it in, ha ha. Since asparagus was on sale and I had some bacon on hand, I decided I would make a batch of asparagus to enjoy with our chicken dinner.

I quite often will steam our asparagus but it always takes more effort than making our asparagus in the oven. This recipe is so super simple, quick, and I can have it in the oven in no time. The result from the oven is amazing, soft, tender asparagus with flavor from the bacon that makes for an amazing tasting side dish.

To make your own Bacon Wrapped Asparagus, you will just need some fresh asparagus, bacon, olive oil, salt, and pepper. SUPER SUPER easy!

INGREDIENTS
per serving:
4 spears Asparagus
1 slice uncooked Bacon
1/2 tsp Olive Oil
Salt and Pepper to taste

DIRECTIONS
Preheat oven to 400.
Trim cut end of each spear.
Arrange on baking sheet.
Drizzle with olive oil and roll to coat.
Wrap each bundle of 4 in a slice of bacon.
Season with salt and pepper.
Bake for 25 minutes until bacon is browned.
