We usually have tons of leftover cake mix sitting around the house and I’m always looking for something to do with it. You’d think the only answer would be cake but there is a shocking amount of recipes you can make with a boxed cake mix. One of my absolute favorites is Cake Mix Cookies- one the absolute easiest ways to make up a delicious batch of cookies!

Soft Cake Mix Cookies for Christmas

With the holidays coming up, I decided to be a bit festive and make some Christmas Cake Mix Cookies this time around. Using some white cake mix and some vanilla extract, I was able to make a sweet cookie that I covered generously with plenty of sprinkles.

The core of this recipe is a simple 4 ingredient mix that makes our cookie dough…
  • Cake Mix – For our Christmas Cookies, we used this white cake mix.
  • Vanilla Extract
  • Vegetable Oil
  • Egg
Outside of that, all you need is some decorative holiday sprinkles!

How to make Cookies from Cake Mix

These cookies are very easy to make! To start, you first need to mix all of our dough ingredients together. In a large bowl, combine everything but the sprinkles and mix until you get a smooth dough.

Now, instead of just rolling our cookies in sprinkles after the fact, we’re actually going to mix some sprinkles in with our dough. Add about half your sprinkles in with your dough and stir them in.

Now we can start forming our dough into balls. We want them to be about tablespoon-sized- maybe about an inch-and-a-half to two inches wide. Once you’ve got these dough balls formed, roll them in your remaining sprinkles.

Line a cookie sheet with some parchment paper and start placing your cookies on it. Leave about 2 inches of space between each cookie. Chances are your cookie sheet wont be big enough to fit all of the cookies at once, so you’ll likely have to bake in batches.

Once your oven is up to temp, send your cookies into a 350 degree oven to bake. It should take around 7-10 minutes for your cookies to finish baking. You’re looking for your cookies to pick up a light golden-brown color.

 

Once your first batch of cookies is done, pull them from the oven and let cool before removing from the cookie sheet. Repeat the baking process with your remaining dough. Once you’ve baked all your dough, grab a cookie and enjoy!

Christmas Cake Mix Cookies

Christmas Cake Mix Cookies are a simple way to whip up some tasty and fluffy cookies. These delicious holiday treats are so easy to make!
Prep: 10 minutes
Cook: 9 minutes
Servings: 20

Ingredients 

  • 15 1/4 oz White Cake Mix
  • 1 Egg
  • 1/3 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 1 cup Sprinkles, divided

Instructions 

  • Preheat the oven to 350.
  • Line a cookie sheet with parchment paper.
  • In a large bowl, beat together the cake mix, egg, oil and vanilla until blended.
  • Fold in 1/2 cup of sprinkles.
  • Transfer remain sprinkle to a plate and set aside.
  • Form the dough into about a tablespoon sized balls.
  • Roll the balls in the sprinkles to coat.
  • Place the balls of dough 2" apart on the prepared baking sheet.
  • Bake for 7-10 minutes or until cookies are just lightly brown and set.
  • Allow to cool for a couple of minutes then transfer to wire rack.
  • Repeat process with remaining dough.

    I have made box cake cookies for Christmas for a few years now. I use all flavors of box mixes. They are delicious and very easy to make. To change mine up I have found that crushed candy in the mix, i.e. MnM’s in the yellow cake mix or Heath Bars in the butter cake mix or the reese’s pieces in chocolate cake mix pair very well.
