Homemade Cinnamon Tortilla Chips

Cinnamon is one of Mexico’s standby spices, in case you didn’t know! Some throw it in with the other “Cs” of Mexican cooking: cumin, corriander, cayenne, and chili powder. All for good reason too, because cinnamon adds that “sweet heat” we’re all familiar with.

Ingredients to Make Our Homemade Cinnamon Tortilla Chips

  • Flour Tortillas – Either go with store-bought or use some Homemade Tortillas.
  • Sugar
  • Butter – Salted or unsalted works.
  • Cinnamon – Traditional Mexican cooking will often use a high-quality ceylon cinnamon. Just try to source some good stuff!
  • Additions/Variations – To make this “rustic,” you could sub the white sugar out for some raw sugar. On top of this, see if a sneaky pinch of cayenne is a welcome bit of extra heat…

How to Make The Cinnamon Chips

The real appeal of this recipe is just how simple it is: the kids could probably whip up a batch of these with little help! Whether you have the kids helping or not, start by getting your oven pre-heated to around 350 degrees. While that’s getting warm, start brushing your tortillas down with the melted butter.

Once you’ve got them all brushed and coated with butter, you’re going to reach for your cinnamon and sugar. Mix the spices together in a bowl and generously dust your buttered tortillas. Here, you can cut your tortillas into smaller chips using something like a pizza, pasty, or pasta wheel cutter. The usual shape is a triangle, but your chips can be whatever shape you want!

Once you cut your chips, you’ll transfer them over to a baking sheet(s) that you’ve sprayed with plenty of nonstick cooking spray. Your oven should be up to temp by this point, so pop your chips in and let them cook for close to 8-10 minutes. You’ll know they’re done when you get them cooked to a light, golden brown color.

  1. Are these supposed to be crunchy? I’ve tried 3 different tortillas and they all came out rubbery, almost impossible to eat. What am I doing wrong??? Please

    1. Hi Karen! They should most definitely be crunchy. We make them often and always are very crisp. Maybe increase the temperature on your oven or cook a bit longer. I would love to help you troubleshoot. I am sorry you are experiencing the issue.
