These Cherry Pie Cookies will make for a perfect summer dessert. Mini pies in the form of a cookie are great for picnics and bbq’s. Super delicious, easy, and so fun!

My Caramel Apple Pie Cookies Recipe is one of the most popular recipes on my blog. They are extremely popular with my family and on the net. Since summer is here and Fourth of July is just around the corner, I thought a cherry pie version of these cookies would be super fun.
Since this recipes calls for store bought ingredients, they can be made in a jiffy. I will pre-warn you, they are a bit messy to make but the mess is so worth it, ha ha.
Cherry pie is a dessert we have often for July 4th. I originally planned to make a homemade cherry pie with loads of star cutouts for the top crust. When I was making these cookies, I decided to try that idea on top of our cookies. Totally fun and cute.
These Cherry Pie Cookies are going to be great for our July 4th get together or for dessert anytime we are craving pie. I plan to serve them with a dish of whipped cream. They are great without whipped topping but I thought the addition of the whipped topping on the side would be a hit.
Pies are great for serving a crowd but can be a bit of a pain when serving. Individual desserts like cookies are perfect because they require no real serve-ware. Just set some napkins on the side and there will be no mess to clean up. PERFECT!
You will have some left over crust with pie filling. There is no need to waste it. Go ahead and place the extra scarps on your cookie sheet and have yourself a little treat.
The only ingredients needed to make these cookies yourself are 2 pie crusts (1 package) or 2 Homemade Pie Crusts, cherry pie filling, an egg, and some sanding sugar (optional). Since we are using prepackaged store bought items, the recipe comes together quite quickly.
INGREDIENTS
1 package Refrigerated Pie Crust (2 crusts)
21 oz Cherry Pie Filling
1 Egg
1 tbsp Sparkling Sugar
DIRECTIONS
Preheat the oven to 350.
Line cookie sheet with parchment paper and set aside.
Allow crusts to warm slightly to make them easier to work with.
Dust work area with flour and slightly roll out crusts.
Use a knife to chop pie filling into smaller pieces and spread over top of one crust.
Cut other crust into 1/2″ strips or stars.
Use strips to create a lattice top over filling covered crust.
Cut out circles and transfer to prepared baking sheet. (I used a small mason jar lid that works perfect)
Beat egg in bowl until well blended.
Brush lattice tops with egg wash and sprinkle with sugar.
Bake for 20-25 minutes or until golden brown.
Yields 12-15 cookies

Be still my heart!!!! Cherry pie is my absolute favorite, so these cookies have my name written all over them. Can’t wait to try them, this weekend. The cherry pie bites, cherry cheesecake dip, and cherry cream cheese crescent ring look pretty darn good, too. These are all calorie-free, aren’t they? I can tell I’m going to be pretty busy, for awhile.
