Key Lime Cupcakes

These tart, tangy, and sweet Key Lime Cupcakes with Key Lime Butter Cream Icing are so simple to make. Perfect summer dessert idea.
Key Lime Cupcakes
We often like to take store bought cake mixes and kick them up a notch with the addition of flavors. For summer months, we make our favorite Root Beer Float Cupcakes and also our Orange Crush Cupcakes.
We love our Key Lime Pie Recipe, my family requests it often during the summer. I love making it for them but a cheesecake takes more effort than cupcakes. Since lime flavors are a favorite at our house, these super easy and super tasty key lime cupcakes are perfect.
The addition of lime juice in the cupcake plus the lime juice and zest in the icing makes this simple dessert taste amazing. They were a hit with my entire family.
You will need one white cake mix and the ingredients called for on the package to make this refreshing dessert. Additionally you will need butter, powdered sugar, and key limes or limes. Key limes can be difficult to locate in some areas and some grocery stores. You could easily make this recipe with key limes or with regular limes. The flavor will still be amazing.
INGREDIENTS
Cake:
1 box White Cake Mix
+box ingredients
1/2 cup Lime Juice
Frosting:
1 cup Butter
6 cup Powdered Sugar
6 tbsp Lime Juice
2 tsp Lime Zest
1 drop Green Food Coloring
DIRECTIONS
Make batter according to box EXCEPT replace 1/2 cup of water with 1/2 cup lime juice.
Fill liners about 1/2 full.
Bake 16-18 minutes or until toothpick inserted in middle comes out clean.
Allow to cool completely on wire rack.
Cream butter in a large bowl.
Add lime juice and food coloring.
Add powdered sugar 1 cup at a time and beat until incorporated.
Add lime zest and whip until distributed.
Transfer to piping bag to frost cupcakes.
