Coconut Truffles

If you are looking to make a great candy for the holidays, these Coconut Truffles are so easy. Amazing coconut cream filling coated in dark chocolate. Great for dessert or even for gifting.
Coconut Truffles
One of my favorite candy bars happens to be a Mounds Bar. There is nothing better than coconut and chocolate together in one sweet treat. During the holidays, I will make a couple batches of our Homemade Chocolate Covered Cherries and also a batch of these Coconut Truffles.
I like to have homemade candies on hand for when we have friends and family visiting over the holidays. I will quite often make extras just to gift. You can toss homemade candies in a clear cellophane bag with a ribbon and tag. They make for personal and inexpensive gifts to give to neighbors, teachers, etc.
The main reason I like these coconut cream truffles is that they are so simple. Plus they are super inexpensive to make. I purchased my coconut and my sweetened condensed milk right at Aldi for under $2.
I made this batch yesterday morning in little to no time. Since there is no baking involved, I just have to wait for the coconut mixture to firm before coating them in chocolate. So simple!
You will need some sweetened coconut, sweetened condensed milk, powdered sugar, butter, and some chocolate melting chips. Since these are so simple, I plan to have my kiddos whip up a couple extra batches this holiday to give to their friends’ parents.
INGREDIENTS
2 1/2 cup Sweetened Shredded Coconut
3 tbsp melted Butter
1/3 cup Sweetened Condensed Milk
1/3 cup Powdered Sugar
1 1/2 cup Chocolate Melting Chips
DIRECTIONS
Line a cookie sheet with parchment paper. Set aside.
Combine all ingredients except for chocolate in a bowl and mix until well blended.
Use a cookie scoop to scoop balls onto prepared sheet or use your hand to form 1 1/2″ balls.
Place in freezer for an hour.
Melt chocolate by heating in microwave for 30 seconds, stirring and repeating just until
melted.
Place each frozen ball onto a fork and dip into melted chocolate.
Gently shake off excess and return to sheet.
Sprinkle top with a little shredded coconut if desired.

I have the sinking feeling i should make another batch of these. I just dont think one batch will be enough. So back to the kitchen i go. I can’t wait to try one.
I made the coconut truffles for a co-worker and she absolutely loved them and wants me to make more which I will. I also made the chocolate covered cherries but I don’t know how those turned out yet got to wait that week to find out but they smelt amazing when I was making them. Thank you,
Usually, people post coconut truffles with WAY too much sugar in them, and they just aren’t good. These have just the right amount of sweet. I brought them to a get together and people couldn’t stop eating them. Thanks for posting this recipe before I had to get busy and figure out one for myself!
I’m making them as gifts for Christmas. Should I store in fridge until then or room temp. I have to make ahead
Hi Ellen! It’s best to keep the Coconut Truffles stored in the refrigerator in an airtight container until you are ready to gift. Then, best if served at room temperature. I hope that helps. Merry Christmas to you!
