Garlic Parmesan Bacon Potatoes

If you are needing a super tasty side dish these Garlic Parmesan Bacon Potatoes will be perfect. These potatoes are loaded up with crispy bacon, garlic and Parmesan and roasted to perfection. They make for a wonderful side dish to just about any meal. We made up a batch to enjoy as an appetizer. The entire family was asking for more.
Garlic Parmesan Bacon Potatoes
I had a feeling this potato recipe would be a hit with my family. We quite often make our CopyCat TGI Friday’s Potato Skins as a appetizer on movie nights and they can never get enough. I was 100% Correct! They were begging for more.
The ingredients for your Garlic Parmesan Bacon Potatoes are so simple. Just grab some Yukon Potatoes, garlic, bacon (I found a great sale this week …$3 at Kroger for center cut bacon), butter and Parmesan Cheese. parsley and green onions make for a nice addition too! Whip these up and the smell throughout your home will have everyone running to the kitchen.
INGREDIENTS
3 lb Yukon Potatoes
12 oz Bacon
2 tbsp Butter
2 tbsp minced Garlic
1/4 cup Parmesan Cheese
1/4 cup chopped fresh Parsley
1/4 cup sliced Green Onion
Salt & Pepper to taste
DIRECTIONS
Slice potatoes in half lengthwise and place in water and boil for 12 minutes.
Drain potatoes and set aside.
Slice bacon into 1″ pieces and fry until cooked but not crispy. Allow to drain. Reserve bacon grease.
Preheat oven to 400.
In a large pan, add 2 tablespoons bacon grease and butter and heat over medium heat.
Add garlic, parsley, salt and perpper and mix well.
Add potatoes and toss to coat well.
Transfer potatoes to baking sheet cut side down.
Sprinkle bacon over potatoes.
Heat 30 minutes or until cut side begins to brown.
Flip and bake another 15 minutes.
Garnish with sliced onions.
