This Strawberry Shortcake Cookie Cups Recipe is now at the top of my list for all time favorite desserts. I am so ecstatic to share it with all of you. Have you ever had one of those Strawberry Crunch Bars? I think they are made by Good Humor. If you are a fan of those, you will find yourself addicted to these Strawberry Shortcake Cookie Cups quite quickly. My Strawberry Shortcake Popsicles were such a hit in our house that I was needing another Strawberry Shortcake idea.

I recall always being so happy on Fridays at school as a child. Fridays were ice cream day. Yup! I LOVED Fridays and I was always sure I had earned my $0.25 so I could enjoy a Strawberry Shortcake Crunch Bar.

When I made these Strawberry Shortcake Cookie Cups I honestly could not quit eating them. That could be a good thing but also a bad thing. Happiness is finding a dessert that I really like and that I am anxious to make for a party. The bad part is I like to consume to many desserts ha ha.

These Strawberry Shortcake Cookie Cups are so simple and require very few ingredients. Basic Pillsbury Sugar Cookie dough had the perfect flavors. The Fresh strawberries and whipped topping with the pureed strawberries just pushed it over the top for me.

INGREDIENTS
Refrigerated Sugar cookie Dough- I used Pillsbury
Reddi Wip Whipped Cream
Fresh strawberries

DIRECTIONS
Preheat oven to 350.
Wash and remove stems from strawberries.
Form cookie dough into 1″ balls. Press each ball into the openings in the muffin pan and press down in the middle with your thumb to form a cup shape.
Bake for 12 minutes or until browned.
Allow to cool for 10 minutes in the pan then remove from pan.
Take a few strawberries and puree them to make a drizzle.
Place a strawberry or piece of a strawberry in each cup. – I used half of a small strawberry in each
Fill cup with Whipped Cream.
Top with a strawberry slice and drizzle of strawberry puree.

If you would like yours to be more like the Strawberry Crunch Bars just toss your cups with the strawberry in to the freezer a bit before topping with your whipped cream and strawberries. Beware though they are so VERY addicting.

  1. These types of cookie cups are so popular right now and delicious. Question..do you use a regular muffin pan or mini? Also how does redi whip hold up? I think I’ll use whipped cream with a stabilizer so they’ll hold up better if sitting out. These look delicious..definitely making soon. Thank you for sharing! I made several other varieties over Christmas, soooo yummy.
