    2 Ingredient Pineapple Cake

This cake is a recipe we make all of the time. I actually snapped these pictures a year or two ago, I just forgot to share it with all of you. I made it again last week which reminded me that I had not put it out on the blog as of yet.

2 Ingredient Pineapple Cake - Yup… Just two ingredients and you can have an awesome summer time picnic dessert.

Last week I needed a quick after dinner dessert. Since we have had quite a few warm days, I have been making quite a few pineapple desserts. Pineapple is my thing during the summer months, ha ha. I shared our Easy Pineapple Dip so you are aware of my Pineapple addiction if you read that post, lol.

For this recipe, all that is needed is a Angel Food Cake Mix and a can of Crushed Pineapple. Yup.. That is it. I sometimes toss some fresh whipped topping on our cake but it is not needed. You can have the cake in the oven baking in a just a couple of minutes. So easy and so delicious.

    INGREDIENTS
1 box Angel Food Cake mix
20 oz Crushed Pineapple with Juice

    DIRECTIONS
Move rack to lowest level in oven.
    Preheat oven to 350.
Combine the ingredients in a bowl (do not overmix).
    Grease a bundt pan.
    Pour into prepared bundt pan.
    Bake for 45 minutes.
Allow to cool 10 mins in pan.
You may need to use a spatula to loosen from bundt pan before inverting.
Allow to finish cooling after removing from pan.

Do you just use the boxed cake mix and the pineapple? No other ingredients that go along with the angel food direction?

Hi Clara! I am sure that would work. I have not tried it with yellow. If you give it a go, be sure to let us know if the flavors work for you.

I made a pineapple and angel food cake mix similar to this recipe many years ago but it bubbled up so big out of the bundt pan that it made a mess if my oven. Will this recipe swell really big too or can I just pour the mix into 3 small 3 cup bundt cake pans to bake and be a precaution for over-flowing again?

When I was a kid…many moons ago, my favorite after school snack was 2 slices, plain ol’ white bread, no crust, mayo, a slice of American cheese, and a slice of canned pineapple, drained……mmmmmgood!

This looks delicious and I cannot wait to try it! I love that this is another reason to use my rarely-used bundt pan. These would be easy ingredients to keep stocked in the pantry for those last-minute notifications when you need to bring a dessert to a gathering!
