Red White & Blue Strawberry Cheesecake Bites

If you are needing a simple appetizer for Memorial Day or July 4th, these Red, White, & Blue Strawberry Cheesecake Bites will be perfect. We simply half strawberries, fill them with a tasty cheesecake mixture, and top them with blueberries. So Easy!
Red White & Blue Strawberry Cheesecake Bites
We always have a grill out on Memorial Day and July 4th. We either grill with family or I quite often host one or the other. Red, white, and blue foods are always perfect for the holidays or any summer picnic. I quite often will make our Berry Cheesecake Salad or just a basic Red, White and Blue Fruit Salad.
Having light fruits to serve for an appetizer is always perfect. Having them to serve before all the massive amounts of grill food is always nice. Everyone always comments on how festive our food is. These little Red, White, & Blue Strawberry Cheesecake Bites are for sure going to be a hit this year for our BBQ’s. You can toss them together so quickly and quite inexpensively.
For dessert, I always have awesome red, white, and blue ideas. I ALWAYS make our Firecracker Jell-O Cups. These cheesecake bites would be great for an after meal dessert too! I like them for an appetizer since they are a perfect finger type food. No plates needed.
The red from the strawberries, white from the cheesecake filling, and blue from the blueberries makes for a very colorful dish. I thought about using my deviled egg holder to serve them but a basic plate worked well.
To make your own Red, White, and Blue Strawberry Cheesecake Bites, you will need some large strawberries. The strawberries I had on hand today were not the best. I would have loved for the green stems to have been bright and colorful. Strawberries have been so hit or miss lately. If you happen to find some beautiful green stems, go ahead and leave them on… they add lots of color. You will also need some blueberries, cream cheese, confectioners sugar (I forgot to put it in the ingredient picture), Cool-Whip, and also some vanilla.
INGREDIENTS
12 large Stawberries.
4 oz softened Cream Cheese
1/2 cup Powdered Sugar
1/2 tsp Vanilla
4 oz Whipped Topping
48 Blueberries
DIRECTIONS
Cut strawberries in half and remove stems and scoop out middles.
Beat together cream cheese and powdered sugar until blended.
Add vanilla and beat to blend.
Fold in whipped topping.
Transfer cheesecake mixture to piping bag and pipe into each strawberry half.
Garnish each with 2 blueberries and refrigerate until ready to serve.
