No Bake Eggnog Cheesecake

If you are needing a holiday dessert that is easy and delicious, you will want to whip up this No Bake Eggnog Cheesecake. You will find the recipe super simple and your holiday guests (even the ones who do not care for eggnog) begging for the recipe.
I am a HUGE fan of no bake cheesecakes. I have shared our favorite No Bake Reese’s Peanut Butter Cheesecake as well as quite a few other all year round cheesecakes. During the holidays, offering up holiday flavors in our desserts always makes our holiday desserts so much better. After sharing our No Bake Peppermint Cheesecake with you last week, I needed a dessert for a family Christmas gathering. So a No Bake Eggnog Cheesecake was my potluck dessert.
I had plenty of eggnog left after making a batch of our Eggnog Fudge so it sounded like a great plan. And… a great plan it was. This dessert has now been added to our list of favorite holiday desserts. Everyone loved it. There were a few that were not eggnog fans and they are now under the impression that eggnog is great when it is in this No bake Cheesecake.
I had numerous requests for this recipe while at our family party. I have to admit that I was shocked at how such a simple recipe could taste so amazing. It is really that good. My kiddos and hubby loved it and decided that another one needed to be made for home. I actually have another I am working on today for this weekend.
Even if you are not a fan of eggnog, I highly suggest you give this eggnog dessert a chance. You will be surprised at how tasty eggnog can be.
This No Bake Eggnog Cheesecake only requires a few ingredients. You will need graham crackers (I used graham cracker crumbs to speed up the process), eggnog, cream cheese, heavy whipping cream, sugar, butter, and a couple spices. I considered using crushed ginger snaps for the crust and may eventually give that a try too. You could also use Cool-Whip instead of heavy whipping cream. I love the fresh stuff.
INGREDIENTS
Crust:
30 Graham Crackers crushed or 3 cups Graham Cracker Crumbs
5 tbsp melted Butter
2 tbsp Brown Sugar
Filling:
16 oz softened Cream Cheese
1 cup Sugar
1/2 cup Eggnog
1 tsp Rum Extract
1/2 tsp Nutmeg
1/4 tsp Cinnamon
16 ounce Heavy Whipping Cream
DIRECTIONS
Crush graham crackers in food processor.
Add melted butter and sugar and pulse to incorporate.
Press mixture into bottom an partially up the sides of a springform pan.
Refrigerate at least 30 minutes to firm.
In a large bowl, beat cream cheese and sugar until creamy.
Add in eggnog, rum extract, nutmeg and cinnamon. Beat until fully blended.
Whip heavy cream until stiff peaks form.
Fold eggnog mixture into whipped cream.
Spread evenly into crust.
Refrigerate at least 2-3 hours before serving.
Garnish with additional whipped topping if desired.

Oh my goodness! This looks absolutely heavenly!
I make this recipe every year for the family dinner. It’s a huge hit and everyone’s favourite. Never a disappointment. Sad that this year 2020 I won’t be bringing it with me to any dinners but I will still make it for my little family for our little dinner this year.
My 8 year old daughter and I made this tonight and the taste is great but my filling came out really fluffy like cool whip. Any ideas on what I could have done wrong?

Hi. I would like to try this with cool whip instead of heavy whipping cream and ready made graham cracker pie crust. Would that work instead if heavy cream and spring foam pan?

What size springform pan did you use 8os or 9oz ?
I made this cheesecake for our christmas lunch 2019. It was an absolute hit. What a great recipe. I did however make a couple of changes. I added crushed gingerbread to the crust and in the filling I used 1 Tablespoon of rum instead of the extract. Also to make sure the cake set I added 1 tsp of powdered gelatine dissolved in a little hot water. I actually made this cake two weeks before christmas day and wrapped it well in foil (in the pan)then froze it. Removed it from the freezer early xmas eve morning and thawed it out in the bottom of my fridge. It turned out perfect on xmas day and saved me a lot of time and stress having this made ahead of time. Great recipe. Will make again for sure.
Can I use light eggnog?
Hi Mary! I have not tried the light eggnog for this recipe. I do not see why it would not work though. If you should make it with the light version, be sure to let us know.
The flavour was great but I ended up with soup! It didn’t set at all!! What did I do wrong?
This recipe is excellent. I piped it into cookie cups I made out of a ginger-molasses cookie recipe I’ve always loved. The result was fabulous! Could bring tears to your eyes! Can you make this in a pan instead of springform pan? What size?
Hi Tobi! If you should choose to make the cheesecake in a pie plate, I would cut the recipe in half. You will not need as much crust or filling to fill a pie plate. I hope that helps. Merry Christmas to you!
What can you use to substitute rum

Hi Suzy! Sorry for the dealy. If you are still planning to make the Eggnog Cheesecake, you can omit the rum if you choose. The extract does work well and keeps the dessert non-alcoholic. I hope your holidays are wonderful.
What size pan is best?
The best-sized springform pan for the no-bake eggnog cheesecake is an 8 or 9-inch, both will work. I have made it with the two different sizes in the past. So sorry for the delay. Merry Christmas!
Love this recipe though I think it needed a bit more flavor so I added additional eggnog and more rum liquor.
I made this for a family gathering and they LOVED it! The only difference was that I used crushed gingersnaps for the base (Thanks for the suggestion!)

Can you get away with just using a premade Graham cracked crust??
