Lemon Lush Bars

If you are a fan of lemon desserts these Lemon Lush Bars are going to become your new favorite lemon recipe. A perfect dessert for all of your summer gatherings.
My hubby and daughter are big fans of lemon desserts. Lemon meringue pies are a frequent after dinner dessert for them. I have always really liked lemon desserts. This summer, we have been enjoying quite a bit of lemon. Our CopyCat Chick-fil-A Frosted Lemonade Recipe has been so popular. A far as desserts, our Lemon Oreo Cheesecake Recipe has been a real hit. These Lemon Lush bars are now one of my favorite desserts for this summer.
You will find a shortbread crust layered with a cream cheese layer, then a lemon pudding layer all topped with some Cool-Whip. These bars are light but full of tremendous lemon flavor.
Since we have bbqs so often during the summer, I am anxious to whip up another batch to share with family and friends. My aunt loves all things lemon and I know she is going to think these bars really rock.
My daughter who is a dessert fanatic couldn’t enjoy just one. Yup… she came back for seconds. Plus she is anxious to enjoy another bar after her lunch today.
It’s amazing how decadent these bars look, like a dessert from a high end restaurant. The layers make them look as good as they taste.
The ingredients needed to make yourself these yummy bars are very simple. You will need cream cheese, lemon pudding, and a few items from your pantry. You will have them ready to serve up in know time at all.
INGREDIENTS
8 tbsp softened Butter
3/4 cup Sugar, divided
3/4 cup Flour
8 oz Cream Cheese
1/2 cup Sugar
1 pkg Instant Lemon Pudding Mix (3.4 oz)
1 3/4 cup Milk
8 oz thawed Frozen Whipped Topping
DIRECTIONS
Preheat oven to 350.
Line an 8×8″ dish with aluminum foil.
Cream the butter and 1/4 cup sugar until creamy.
Beat in the flour until well blended.
Press into bottom of prepared pan and bake 25 minutes or until lightly brown on edges.
Allow to cool.
Beat together cream cheese and 1/2 cup sugar until well blended.
Spread over cooled crust.
In another bowl combine pudding mix and milk and beat for 3 minutes until barely thickened.
Spread over the cream cheese.
Refrigerate until pudding is set.
Remove from pan by lifting foil.
Cut into bars.
Spread whipped topping over bars.

Hello, I really appreciate your recipes/website!!! I’ve made allot of your recipes with much success….I only have one question….do you have a copycat recipe for jello/ & jello pudding used in many dessert recipes??? I was just wondering and looking for a way to maybe cut some sugars as well as processed foods…also in place of cool whip I found another whipped topping similiar, but a little healthier, it’s called truwhip ~ I found it at sams club first and just today spotted it at Walmart…minus all the junk and tastes great and works in your recipes!! So, thank you again for all your hard work, tonight I’m making philly cheese steaks in the green peppers!!! Can’t wait???
