Spoon with Hamburger Helper

Did you grow up with Hamburger Helper on your dinner table? I know I did. My mother always reached for the boxed stuff when she was busy. I can’t say as I blame her. I have memories with helper being in our dinner rotation frequently. It was one of my childhood favorites and I love this stuff to this day.

Over the years, Betty Crocker has made quite a few different variations of the quick and easy dinner idea. When surfing the web, I came across a blog, The Chickens In the Road. This site has quite a few different recipes for Hamburger Helper but they did not have one for our favorite Beef Pasta.

I decided to create a from scratch Hamburger Helper Beef Noodle version. As it turns out, it was so quick and easy to make. I had everything right in my pantry to make homemade.

Ingredients to make Hamburger Helper

Ingredients To Make Hamburger Helper

  • Ground Beef – It’s best to use a lean ground beef. The less fat content makes for a less greasy dish. You could also substitute the protein with ground chicken or ground turkey to make the meal a bit healthier.
  • Pasta – I kept our replicated hamburger helper authentic by using wide egg noodles.
  • Bouillon Cubes – I use 3 cubes for this recipe. Readers have since commented that they have successfully used 2 cubes or subbed with Beef Broth in place of the Bouillon and water. These modifications do make the dish a bit healthier and with lower sodium.
  • Water – As noted above, you can make the hamburger helper without the Bouillon Cubes and replacing the water with broth.
  • Milk – I use a whole milk when making this beef pasta recipe for my family. Readers have mentioned subbing the 2 cups of milk with 1 1/2 cups of heavy cream. I have not tested but they have had great results.
  • Cornstarch – Will thicken the beef sauce.
  • Garlic Powder – adds some additional flavor.
  • Onion Powder – keeps the recipe kid- friendly but makes the dish less bland.
  • Sugar – Balances the flavors from the savory ingredients.
  • Salt & Pepper – in my original recipe I included measurements. Since having feedback from readers (Thank you much), I am going to mention salting and peppering to taste.

How to Make Hamburger Helper

Note: detailed measurements and instructions are located in the recipe card below.

  1. Mix together cornstarch, sugar, onion powder and garlic powder in a small bowl and set aside.
  2. Brown the ground beef in a skillet over medium-high heat. Then then drain off excess grease.
  3. Make bouillon mixture by microwaving water and then dissolving the cubes. Add to the ground beef.
  4. Stir in milk and then seasoning mix until fully incorporated. Add in egg noodles then bring to a boil before reducing heat to low.
  5. Cover Beef Noodle and let simmer for about 15 minutes or until egg noodles are tender.

Variations for this Easy Hamburger Helper Beef Pasta Recipe

  • Protein: As mentioned, ground turkey, ground chicken, sausage or vegetable protein can be used as a substitute for the ground beef.
  • Pasta: Most any will work with this recipe, even a whole wheat pasta. Consider using elbow macaroni, shell pasta, farfalle, penne or a bowtie… use your family favorite. Note that my recipe has only been tested with egg noodles. If using a different noodle you may need additional liquids and a bit longer cook time.
  • Veggies: Consider adding your family favorite canned vegetables to your hamburger pasta. We like to add mushrooms, corn, peas, green peppers and onions. You could even add some spinach. Just add the vegetables near the end of cooking.
  • Spices: Paprika, chili powder, a dash thyme or even a sprinkle of red pepper will amp up the flavor profile. Experiment with spices that you like most.
  • Cheese: You could certainly top the hamburger pasta with cheddar cheese, or maybe provolone. Add at the end of cooking then place a lid over the pan for a few minutes to melt.
  • Sour Cream: Many readers have mentioned adding a bit of sour cream to their Homemade Helper for extra creamy pasta. This will make the dish a bit more like a Hamburger Helper Beef Stroganoff. Just add 1/2 cup of sour cream near the end of cooking.
  • Dairy Free: This recipe can be made without the milk. But, it will need to be replaced with water, beef broth, vegetable broth or unflavored soy milk. Some readers have used oat milk but noted this substitution does change the flavor profile.

FAQs about Hamburger Helper

What is Hamburger Helper?

Hamburger Helper is the product created to stretch meat in meals. The concept is to provide the starch or fiber (usually pasta) along with a seasoning packet (with associated nutrients and preservatives) in a box. This is then combined with browned meat and specified liquids and allowed to simmer until a one pot meal is ready.

Who makes hamburger helper?

Hamburger Helper is made by General Mills through their Betty Crocker division.

Who invented Hamburger Helper?

The product was invented in the labs of Betty Crocker and introduced in 1971 to help families working on a budget use less meat when making a meal.

What are the different types of Hamburger Helper?

There are dozens of flavors of Hamburger Helper, not to mention Cheeseburger Helper, Tuna Helper and Chicken Helper. You can find the current product lineup on their site.

How do you make regular Hamburger Helper?

You make it in the same basic way we make our home made Hamburger Helper, except they use a powdered beef flavor in with the spice packet to eliminate a step (and add preservatives).

What’s the difference between deluxe and regular Hamburger Helper?

They are basically the same. This is an example of marketing. Thanks Hambuger Helper.

Do you need milk for Hamburger Helper?

The simple answer is no, but you’ll need to add something to replace it. Milk is what makes the final dish creamy. What to use depends on whether you are dairy averse or just out of milk. You could use heavy cream, evaporated milk or even plain yogurt diluted with a little water. If you want to avoid dairy, unflavored soy milk, oat milk or even just bouillion can work.

How to make hamburger helper creamier?

Using whole milk adds more milkfat to the final dish. If it is still not enough for you, you can add a tablespoon of butter, sour cream or cream cheese during the last 5 minutes of cooking.

Do you boil pasta first for Hamburger Helper?

No. The pasta should cook in the pan during the normal process described in the Hamberger Helper recipe.

How to make Hamburger Helper taste better?

This depends on what you feel is lacking in the final dish. If it is just bland, you can increase the amount of dry bouillion and dry spices by about 25%.

Tips for Making the Hamburger Helper Beef Pasta

  1. Cook in a large skillet or grab your favorite Dutch Oven– either will work great for this recipe.
  2. After browning the meat and you are ready to drain the excess grease consider using the “paper towel” method to remove the unwanted fat. Press all of the cooked meat to one side of the pan. Then use a clean paper towel to soak up the grease. No need for a strainer!
  3. If your sauce appears thick and you have quite a bit of cook time left (the pasta is not yet al dente), you can add add about 1/4 -1/2 cup additional liquid. I use additional water.
  4. To dress up the finished meal, garnish with a little fresh parsley.

Leftovers and Reheating Hamburger Helper

  • If you miraculously have leftovers, you can store them in an airtight container. It will keep in the fridge for about 3 days.
  • To reheat Hamburger Helper, simply add a cap full of milk and cook in a pan over low heat. Stir occasionally. Pasta is ready to serve after noodles and ground beef are at desired temperature.
  • Hamburger Helper can be stored in the freezer, but it does not freeze well. The noodles can become very mushy when frozen and then reheated.

What to Serve with Hamburger Helper

Hamburger Helper is a meal in itself. There really is no need for side dishes. That’s what makes one pot meals great. But, here are a few ideas if you are looking to stretch the helper to feed a larger family.

  • A simple tossed garden salad is perfect. Add on some CopyCat Olive Garden Dressing!
  • Bread – Grab a french loaf or even leftover hamburger or hot dog rolls. Then, top it with my Garlic Butter Spread for a quick and easy side.
  • Vegetables – any of your favorites alongside. Give my Roasted Green Beans a try. They are simple to make and everyone will enjoy them.

  1. 5 stars
I use 5 cubes of beef bouillon, just a little onion powder and follow the rest of the recipe and my kids like it way better than the boxed and it’s much healthier. I’m about to try this recipe with gluten free noodles for my celiac daughter. Anymore recipes like this?

  2. This was DELICIOUS!!!! Definitely will make again, only omitted salt and used whole wheat noodles

  3. I too am excited about finding this recipe and will make it again. Next time I will decrease salt by half, decrease garlic powder by half, and increase water by 1 cup. Probs decrease onion powder a little and may add a boulion cube. I Think those changes will make it taste and act more like the box. Thanks!

  4. I so rarely post a comment to anything online but had to take a second and do one for this recipe. I thought it was delicious however hubby said this was the best hamburger helper that he has ever had! Getting ready to fix it again tonight. Thank you!!

  5. I followed the recipe (minus the salt). Bought 2 8oz bags of egg noodles (equally 2 cups) but it was WAY too much noodles, with not enough liquid for the noodles to sit in!? So I doubled up and made another batch of sauce to add. Noodles are still kinda dry kinda dry, but the flavor is there! I’ll try one bag of noodles next time and double the recipe.

  6. My husband loved this from the word go! With all our recipes we always try to one up it and after several tries we finally found it! Use Beef Consume instead of water add the boullion cubes, we also fried the meat with a little garlic (personal preference) cut back salt to a dash and voila! Delicious Beef Pasta that gets the plate licked clean :-D
    Thanks for the awesome recipe!

  7. Made this tonight – was very good but quite salty. I’ll leave out the salt next time as the 3 buillion cubes are enough; will also cut back on the garlic powder & add an additional 1 cup noodles and 1 small can sliced drained mushrooms. Husband liked it very much.

  8. A must try for us. I love the boxed beef noodle hamburger helper but was always way too salty for us. I am excited to try this minus the salt, your other readers had it right, bouillion has enough salt.

  9. This looks so good! Beef noodle is mine and my kiddo’s favorite, too, but I’m trying to be more cautious of what I’m eating and what I’m feeding him. Is there any chance you could provide the nutritional information for this recipe?
Hamburger helper out of the box is truly atrocious in that area!

  10. I am so excited to find this recipe. This is also one of my favorite hamburger helpers. After much research I have stopped eating all boxed food and make everything from scratch. I have been so lost on how to make this, thank you. My family will be pleased thus evening. Thank you!

  11. I would implore your web devs to fix the social network sharing bar on the side, as it blocks the recipes on iPad. I’m sure I’m not the only one that uses my iPad for recipes when cooking, rather than booting up the PC, and printing it off. A more sustainable approach to waste less! When deving a website, it’s important to consider all platforms! (mobile and tablets!) Making this one tonight, even with the challenges of reading the directions! Can’t wait!

  12. Made this tonight. Flavor was right on, but for some reason it was way too salty. Will make gain but ext me will cut down on salt or bouillon.

    1. Mine was too salty also, but loved the flavor of it. I will not add the salt next time because I think the bouillon cubes are probably salty enough.

      1. I made this with no salt, but I added some browning sauce to give it a little color. Next time I will cut back on the black pepper.

  13. Made this tonight for my family. It was amazing! I used gluten free macaroni nodles and it turned out great! Thank you for this recepie!!!

  14. I made this tonight. My guys love Hamburg Helper and I love being able to make it healthier. Mixed in cut froz string beans and a loaf of garlic bread. Dinner in under 30. Verdict. Put on rotation Mom!
