Easy Pumpkin Cupcakes

Today, I am sharing this recipe for Easy Pumpkin Cupcakes with Cream Cheese Frosting. No need to make them from scratch when you can use a simple cake mix. Great for fall and Thanksgiving dessert.
Easy Pumpkin Cupcakes with Cream Cheese Frosting
Simple recipes that are so easy to make are my favorite. Cake mixes always make baking so much easier. My family has been loving all of my pumpkin desserts that I have been making. My teenager who is in his senior year of high school is my biggest pumpkin fan. He has been packing all of my pumpkin desserts in his lunchbox each day. I made my Easy Chocolate Pumpkin Cake with Pumpkin Buttercream Frosting last week and he and the rest of my crew had it polished off so quickly.
Since I needed another easy recipe, I created these super simple Easy Pumpkin Cupcakes with Cream Cheese Frosting. I consider making my Pumpkin Cake with Cream Cheese Frosting but it is made from scratch and I was a bit pressed for time over the holiday weekend. I had my cupcakes in the oven in just a couple of minutes. I made the frosting while they were cooling. So easy and not much mess to clean up either.
When my grocery store runs a cake sale, I really stock up. I purchase quite a few different flavors when they are inexpensive. It is great to have them on hand because there are so many recipes that you can use a boxed cake mix to create an amazing dessert. I plan to make my 3 Ingredient Apple Cake next week because I have quite a bit of apple pie filling on hand.
These Easy Pumpkin Cupcakes were amazing. I find them to be a similar consistency to my Pumpkin Pie Cupcakes. These ones do not require as much effort though and taste so good.The cupcakes are very moist. They do not rise as much as a traditional cupcake but the flavor and overall texture is so good. When topping them with the homemade cream cheese frosting, they become totally delish. I did purchase these cute Wilton Pumpkin Candies on Amazon for the tops to make them oh so cute. They are not necessary but I think they will be great to make them perfect for a Thanksgiving dessert.
If you are looking to make an easy pumpkin cupcake recipe, grab yourself a cake mix. I used a classic white. I am sure you could use a yellow or even a spiced cake mix if you choose. You will need a can of pumpkin puree and pumpkin pie spice (please note, I accidentally had cinnamon in my ingredient picture). If you would like you can use my Homemade Pumpkin Pie Spice recipe. You will use all the ingredients that are called for on your cake mix. Mine called for 3 eggs, 1/3 cup oil, and 1 cup of water. Be sure to use the ingredients called for on your boxed cake mix. You can use my recipe for cream cheese frosting. It is so easy and pairs perfectly with the pumpkin flavors in the cupcake. If you are really pressed for time, you could purchase a canister of store bought frosting.
INGREDIENTS NEEDED TO MAKE EASY PUMPKIN CUPCAKES WITH CREAM CHEESE FROSTING
Cupcakes:
1 box White Cake Mix plus box ingredients
15 oz Pumpkin Puree
1 tbsp Pumpkin Pie spice
Frosting:
8 oz softened Cream Cheese
1/2 cup softened Butter
2 tsp Vanilla
6 cup Powdered Sugar
HOW TO MAKE EASY PUMPKIN CUPCAKES WITH CREAM CHEESE FROSTING
Cupcakes:
Preheat oven to 350.
In a large bowl, combine cake mix, cake mix ingredient, pumpkin and pumpkin pie spice.
Beat until blended.
Line muffin pan with paper liners.
Fill each liner 2/3 full of batter.
Bake 18-22 minutes or until toothpick inserted in center comes out clean.
Allow to cool.
Frosting:
Beat cream cheese, butter and vanilla until well blended.
Slowly beat in powdered sugar.
Transfer frosting to piping bag and frost each cupcake.

Made these last year for friends and coworkers. BIG shut with everyone. I used the seasonal pumpkin and candy corn candies and a Halloween cupcake liner and pic to decorate. I also added a little orange juice and orange zest to my frosting for a little zing. So cute and delicious.
