Easy Lime Cake

This Easy Lime Cake with Cream Cheese Frosting is so simple and tastes amazing. We made some modifications to a simple lemon cake mix to make one amazing and flavorful cake.
Easy Lime Cake
During the summer months, I am a fan of lime and lemon desserts. One of our favorite drinks when it is hot is a Homemade Limeade. One of our my favorite cheesecakes happens to be a refreshing Key Lime Cheesecake that I have made already this spring.
Cream cheese frosting is the BEST and when you add it to this easy lime cake, you have a flavor combination that is absolutely AMAZING.
I normally make my summer cakes in a traditional 9X13 cake pan but for this cake, I wanted to take a stab at a nicer looking round cake. I have found through my own experiences that the cakes can be removed from the pan so easily. I just use quite a bit of shortening to grease the pans well.
One of these days I will invest in some fancy frosting spatulas so I can frost my cakes better. My simple butter knife does the trick in the mean time, lol. I just layered on the super easy cream cheese frosting, added some lime zest and some simple lime slices to really dress up this simple cake.
Since all of my kiddos LOVED this easy cake, I think it will be made a few times during the hot summer months. The cake is super moist and spongy so they all loved it!
Lime desserts are always a hit during the summer months. Do you have a summer bbq you will be attending? If so, this cake would make for a perfect potluck dessert.
To make yourself this Easy Lime Cake with Cream Cheese frosting, you will need a lemon cake mix, lime Jell-O, orange juice, cream cheese, a lime, and a few pantry items. Pretty simple and so easy to make.
INGREDIENTS
1 (18.5 oz) box Lemon Cake Mix
1 cup Vegetable Oil
4 Eggs
1 small (3 oz) box Lime Gelatin
3/4 cup orange juice
1/2 cup butter
8 oz softened Cream Cheese
Juice for 1/2 Lime (about 3 tbsp)
4 cup Powdered Sugar
DIRECTIONS
Preheat oven to 350.
Grease two 9 inch cakes pans.
Mix together cake mix, gelatin, oil, eggs, lime juice and orange juice.
Pour into prepared pans.
Bake for 25-30 minutes or until toothpick inserted in center comes out clean.
Allow to cool.
Beat together butter and cream cheese until fluffy.
Gradually add powdered sugar, mixing until blended.
Frost cake.
You can optionally garnish with lime zest and lime slices.

Can I make a Bundt cake
Does it really need 1 cup of oil?
I can’t find and cakes that are 18 oz, most are 15.25. Does that make a huge difference?
This is due to the new sizing on the cake mixes. You should be fine to use the recipe as written. I hope that helps.
Mine fell like a rock. Wish i had read reviews first since i see that the lime juice instructions are not correct. I had hoped to take this to a gathering. It tastes fine, just nig what I was hoping for. 😕
I tried making this and the cake batter boiled over the pans while in the oven. I’m not sure what I could’ve done wrong, I followed the directions exactly. Any suggestions?
I made this and it was awesome. Can I use the mixture to make cupcakes instead of a whole cake?

Question here – the lime juice is listed in the ingredient list with the frosting ingredients, but in the directions is added to the cake. Just wondering if it’s an ingredient in the cake or the frostign?

Hi Bunny! I am so sorry that the lime juice was a bit confusing. Going to have my hubby fix the recipe today. I did add lime juice to both the cake and to the frosting. I used the juice from half of the lime in the cake and the other half in the frosting. I hope that helps and so sorry for the confusion. Hope you have a wonderful weekend.
