We enjoy taco night at home weekly. I make easy Oven Tacos when I am pressed for time and needing convenience.  When we head out to the restaurants, I am always anxious to order Quesadillas from the appetizer menu. I will enjoy them for my meal. The big issue is the cost when dining out is crazy. Quite often they are over $10 for a small plate of quesadillas. That’s just plain crazy.

We have been trying to keep our grocery budget in check lately. Shopping at Aldi saves us a bundle each and every week. We made our Pepperoni Grilled Cheese Sandwiches again this week and also this great Chicken Quesadillas Aldi Meal. These really made for a great meals that filled my large family and kept our grocery budget to a minimum.

You will need chicken, flour tortilla shells, cheese, taco seasoning and some veggies for this super dinner idea. With a just a little bit of time you can feed your family this appetizer for a meal favorite.

INGREDIENTS
1 lb Boneless Skinless Chicken Thighs
10 Medium Flour Tortillas
1/2 packet Taco Seasoning Mix
1/2 Onion Finely Chopped
1/2 Bell Pepper Finely Chopped
1/2 Tomato Chopped
1 1/2 cup Mexican Cheese Blend
1 tbsp Olive Oil

Chicken Quesadillas Meal - Super dinner or appetizer idea. Everything for this meal can be purchase at Aldi for around $10 and feed a larger family.

DIRECTIONS
Cut thighs into thin strips.
Heat oil in large skillet over medium heat.
Cook chicken, onions, peppers and tomatoes until chicken is no longer pink.
Sprinkle taco seasoning over mixture and stir to coat.
Continue cooking for 5 minutes.
Heat heavy skillet over medium heat.
Place a tortilla in skillet.
Top tortilla with meat and vegetable mixture and sprinkle cheese liberally over the op.
Place another tortilla on top.
Place a smaller skillet on top to gently press down.
Allow to cook for 2-3 minutes or until bottom is starting to brown.
Remove skillet and flip. Replace smaller skillet and cook for 2-3 more minutes or until that side is lightly browned.
Remove to another plate and cook remaining quesadillas in similar manner.
