Salads are some of the best appetizers out there. “Salad” is such an open-ended term and all sorts of spreads can all fall under the term. What’s more, all sorts of different cultures and countries have their own unique salad recipes! Whether your setting something out before dinner or making up some salad for lunch, mix things up by trying some new and different salads. Start off with this Greek Salad we just whipped up!

Greek Salad is interesting in that it typically doesn’t contain any leafy greens- more on that later. Instead, all the flavors is provided by a variety of fresh veggies, tomatoes, and a quick and easy salad dressing. When you’re working with cucumbers, tomatoes, and red onion, you know you’re in for a very bright and crisp tasting salad!

Of course, we’ve also packed this with a few other ingredients to keep things interesting. Some kalamata olives and some feta bring some nice salty and briny flavors to remind you that this is a Mediterranean dish. Some bell pepper, as well, has been added in for a light touch of heat. In all, this salad is perfect for the coming spring and summer months!

Greek Salad Ingredients

We’ve got two parts to this salad recipe: the salad itself and the dressing. For the dressing, you’re going to need…
  • Olive Oil
  • Lemon Juice
  • Red Wine Vinegar
  • Honey
  • Minced Garlic
  • Oregano
  • Salt
For the salad itself, here’s what we’ll use…
  • Cucumber – We use English here.
  • Red Onion
  • Tomatoes – We used these small, cherry tomatoes.
  • Bell Pepper – We ended up using a few small ones in ours- it brings a lot of extra color to this salad!
  • Kalamata Olives
  • Feta Cheese – This is the authentic option, but if you’d like a less salty or more mild cheese, consider using something like Ricotta or Halloumi.

How to make Greek Salad

This Easy Greek Salad is simple to make. Here’s what you need to do…
  1. Prepare your salad dressing by whisking or shaking to combine. Keep refrigerated.
  2. Slice your cucumber, onion, tomatoes, peppers, and olives before adding to a bowl with the feta.
  3. Remix your salad dressing- if separated- and top your salad with dressing before tossing to coat.

After thoroughly mixing your salad dressing ingredients until combined, transfer it to a fridge while you start on the salad. Lots of chopping to do- start with the cucumber, sliced and quartered.

Next, our red onion. Cut it into nice, thin strings for our salad.

For the tomato, if you’re using these extra small ones you can get away with just halfing them. If using another kind of tomato, just cut into larger bite-sized pieces.

Deseed your peppers and slice those thin as well. Drain off the olives and either half or quarter them. Add all those ingredients to a bowl along with some feta cheese.

Grab your salad dressing from the fridge. If it’s separated, remix it real quick before topping your salad with it.

All that’s left is to give that a quick toss to coat and to transfer it to a nice serving bowl. Optionally toss with a few more olives and some more feta before enjoying!

Of course, you can always experiment and see what other ingredients you like in this salad! Here are a few popular additions to start things off…
  • Capers
  • Lettuce – This is a “horiatiki salad,” which is known for its lack of lettuce. However, you can add some lettuce to yours if you’d like! We like Romaine.
  • Pepperoncinis
  • Anchovies or Sardines

How long does salad last in the fridge?

This Greek Salad is just a bit sturdier than most other salads you might keep in the fridge. Since we haven’t used any leafy greens and only dressed it with a simple vinaigrette, it should hold up in the fridge for about 3 days! To keep it from getting too soggy, optionally line whatever container you are storing in with paper towels. If you replace the towels often, they should soak up most of the moisture your ingredients might weep.

Greek Salad

Greek Salad is made with fresh, sharp ingredients that taste amazing! This is a quick and easy salad recipe packed with Mediterranean flavor.

Ingredients 

Salad Dressing:

  • 6 tbsp Olive Oil
  • 1 1/2 tbsp Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 3/4 tsp Honey
  • 1 1/2 tsp minced Garlic
  • 1 tsp Oregano
  • 1/4 tsp Salt

Salad:

  • 1 English Cucumber, sliced and quartered
  • 1/2 Red Onion, sliced thin and cut into strings
  • 10 oz Cherry Tomatoes, cut in half
  • 1 Bell Pepper, remove seeds and chop (i used a little red, yellow and green in mine)
  • 3/4 cup Kalamata Olives, drained and sliced
  • 4 oz Feta Cheese, crumbled

Instructions 

  • Combine all salad dressing ingredients in a bowl and whisk to combine.
  • Refrigerate until ready to serve.
  • In a large bowl, add cucumber, onion, tomatoes, bell pepper, and olives.
  • Add olives and feta cheese.
  • Pour dressing over top and toss to coat.

Notes
