Watergate Salad

This Watergate Salad recipe or you may call it Pistachio Delight is super tasty and super simple to make. All that is needed is pistachio pudding, pineapple, marshmallows and some whipped topping. This salad will make for a perfect side dish with just about any meal.
Watergate Salad
When I was growing up, there was always this green salad on the food table at our family get togethers. I am not sure why but the color always scared me away. Or maybe it was the word pistachio, ha ha! Whichever it was, I am thoroughly disappointed that I did not try this yummy salad until I was an adult. Wow, I was really missing out all those years.
Watergate salad is so light and fluffy, you gotta love it! The pineapples and juice mixed in with the pistachio pudding and Cool-Whip make for such wonderful flavors.
Since I was needing a quick and easy side dish for our bbq at a friends house this evening, I decided to make up a double batch of Watergate salad. It is so hot this weekend here in Cincy, the lighter the food the better!
The ingredients needed to make this super easy salad are so simple. Plus the time required is just minutes.
INGREDIENTS
1 (4 ounce) box Instant Pistachio Pudding Mix
1 (20 ounce) can Crushed Pineapple, undrained
1 cup Mini Marshmallow
2 cup thawed Whipped Topping (like Cool Whip)
DIRECTIONS
Combine pudding mix and pineapple with juice in a large bowl and mix well.
Add marshmallows and mix until well blended.
Fold in whipped topping.
Refrigerate until ready to serve.
Place in serving dishes and optionally top with whipped topping and garnish with chopped nuts.
When you have summer bbq’s and family get togethers, do you normally take a min dish or a simple side dish? We tend to alternate. Sometimes a side dish, sometimes we take dessert, some times meat for grilling.
