Blueberry Pancake Bites

These Blueberry Pancake Bites are super simple and perfect for on the go breakfasts. A bite sized pancake bite loaded with blueberries (or whichever mix-in your prefer). Place them in a cup and send the kiddos off to school with a warm, easy and tasty breakfast. Since our French Toast Cups are such a hit with my kiddos. Also our Blueberry Pancake French Toast Casserole is so super tasty. I knew these Pancake Bites were sure to please.

Blueberry Pancake Bites

We whipped up a batch of these Pancake Bites in no time. I made a few batches after everybody gave their approval. I wanted extras to toss in the freezer for the kiddos to have for quick and easy breakfast on school days. I decided to make some small baggies of icing too. Perfect to microwave before heading out.

INGREDIENTS
1 cup Flour
1 tsp Baking Powder
2 tsp Sugar
1 beaten Egg
1/2 tsp Vanilla
1/2 cup Milk
2 tbsp melted Butter
40 (1/2 cup) Blueberries

DIRECTIONS
Preheat oven to 375.
Spray donut hole pan with nonstick spray.
Whisk together flour, baking powder and sugar.
Stir together egg, vanilla, milk and butter.
Add wet ingredients to dry ingredients
Fill each hole 2/3 full and press 2 blueberries in each cavity.
Bake 12 minutes then flip each hole and bake for another 3 minutes.
Serve with syrup, glaze or dusted in powdered sugar, if desired.

Grab your favorite pancake recipe or you can use the one I used below. I used my donut hole pan to make them nice and round. If you are looking for a donut pan you can hop on over to Amazon and snag this Wilton Doughnut Hole Pan. You could also use a cake pop pan or cake pop maker too!

    I was wondering about the 40 1/4 cups of blueberries too. I won’t be making them if it takes that much. Just kidding, I know that had to be an error. How much should it really be?

  2. So, your recipe says 40 1/4 cups of blueberries… Is that supposed to say 4 1/2? Or maybe just 1/2 ecause that’s a lot.

  3. Please respect the heritage these come from. They are Danish. They are called aebleskivers. They are made in an aebleskiver pan not a donut hole pan. And yes, quite delicious

  4. I’m looking for anything blueberry with blueberry season coming up! These look delicious! Thank you for sharing! My kiddos will love these for breakfast!

  5. I’m wondering if you couldn’t deep fry them like mini donuts? I used to open a tube of biscuits and cut a hole in the center and deep fry them for my kids, had a cup of each of their favorite dip they did their own thing. Quite a hit, and a yummy breakfast.

  6. I saw these on Pinterest and thought they looked yummy. But for the people who do not have a donut hole pan, can we use just a regular cupcake pan? I mean i dont think people usually just have a donut hole pan laying around.

  7. I tried these with cinnamon, brown sugar and butter in the bottom. That was good also. But don’t turn them over during cooking. Didn’t use a donut hole pan, but used a mini cupcake pan and cooked them about 15 minutes or so.

    Can I use a cupcake pan and then just cook them for 15 minutes? I am out camping and I don’t have a donut thing.
