2 Ingredient Pineapple Sorbet
During the hot summer months, we love to make cold treats to enjoy. I have shared quite a few here on my blog. My family loves our Watermelon Sorbet. I make it so often during the summer months. Sorbet is always so easy and is always so refreshing. It cools you off on a hot summer day.
Last week, I scored an awesome $0.99 each deal for fresh pineapple at my Kroger. I think I bought like 6 of them. Since we love pineapple so much, I knew I could make quite a few pineapple recipes for the kiddos with them. Plus, I plan to make more of our Grilled Pineapple to enjoy with some of our dinners when we BBQ.
This Pineapple Sorbet recipe is so super simple. I plan to make another batch or two to enjoy on our days we plan to spend time in the pool. The sun has been so hot so we have been doing quite a bit of swimming. After the kids hop out of the pool, I like to have a cold summer treat for them. When I was growing up, I always looked forward to an afternoon ice cream or popsicle from the ice cream man. Since we do not have one that frequents our neighborhood, this momma just makes our own homemade frozen treats.
I was even a bit creative and served our sorbet in a pineapple that I halved. It was a fun idea and will definitely be a nice presentation. The kids thought it was pretty cool. My son thought the whole pineapple was for him, lol. I always find cute treat cups when I hit Hobby Lobby. They make for a great presentation when sharing here on my blog. But, I like that it always makes my kiddos and their friends feel like my homemade treats are a bit special when served in cute little cups.
I mentioned above how easy this 2 Ingredient Pineapple Sorbet is. You will need fresh, frozen, or even canned pineapple and some sugar. I have a Vitamix Blender that I LOVE. It is a VERY strong blender. If you do not have a strong blender or strong food processor, you may need to use a bit of water to help breakdown your pineapple. Or do not freeze your pineapple super hard. If your sorbet gets too liquified… no need to worry. Just toss it in the freezer for a bit and it will harden back up and still be perfect.
INGREDIENTS FOR 2 INGREDIENT PINEAPPLE SORBET
1 Fresh Pineapple
6 tbsp Sugar
DIRECTIONS TO MAKE 2 INGREDIENT PINEAPPLE SORBET
Peel, core and cut pineapple in chunks.
Place in zippered bag and freeze for several hours.
Place in blender or food processor and add sugar.
Pulse until blended.
Serve.

Hi, I love this recipe but due to poor health I’m unable to peel and cut the pineapple. You mentioned using canned, so how much would I need please?
HI Mandy! Totally understandable. I would say 1.5 to 2 cans of the canned cubed pineapple frozen should work. Hope you get to feeling better.
