My boys all love to have chicken for dinner. I am a fan of chicken too but I get bored of eating the same flavored chicken over and over again. My favorite chicken recipe that I have shared with you is our Red Hot Chicken. It is a really flavorful chicken. Last week, the boys were requesting chicken for dinner for the third time in a week. This momma had to get creative and think of a different chicken recipe to make for these chicken eating boys.

I like crusty type chicken. It can be dipped in just about any sauce and lets everyone choose between bbq, buffalo, honey mustard, etc. So I decided to make this Potato Chip crusted chicken. My grandmother made this frequently when I was a kiddo and I always thought it was perfect with all the crusty pieces.

The beauty of Potato Chip Chicken is that you can make your chicken have just about any flavor you like. Just grab your favorite potato chips like sour cream and onion, cheddar sour cream, bbq. You name it, the flavor of your potato chip chicken can be any chip flavor. I used a plain flavored chip to keep my entire crew happy. My family loved this new chicken dinner idea, it was moist and delish. I liked that it was an inexpensive meal and was so super simple to make. The next time I make them, I will get creative with some flavored chips.

When you are shopping this week, grab some chicken breasts and a bag of chips. This recipe is so super simple. Potato chips are so much cheaper than shake and bake and the chip coating is so much better.

INGREDIENTS NEEDED TO MAKE POTATO CHIP CRUSTED CHICKEN

1 lb Boneless Skinless Chicken Breast
11 oz bag Potato Chips
1 Egg
1 tbsp Water

HOW TO MAKE POTATO CHIP CRUSTED CHICKEN

Line baking sheet with aluminum foil.
Preheat oven to 400.
Place rack over foil and set aside.
In a shallow bowl, beat egg until blended.
Add water and beat until blended. Set aside.
Crush potato chips in food processor or place in zippered bag and use rolling pin to crush.
Transfer chips to another shallow bowl and set aside.
Split breasts lengthwise and pound to about 1/2″ thickness.
Dip each piece of chicken in egg mixture making sure to coat.
Allow excess egg to drip off.
Place in chips. Sprinkle more chips over top. Gently press, then turn and repeat on other side. Shake off excess. Repeat with remaining chicken.
Place chicken on prepared pan.
Bake for 35 minutes.
