I am always eager to bake during the fall months. Fall cookies like Caramel Apple Pie Cookies and Pumpkin Chocolate Chip Cookies make for delicious fall cookies. But, these Cut Out Pumpkin Cookies are so simple to make.

Initially, I found these pumpkin cutout cookies from the Pioneer Woman. I adapted the recipe and used Betty Crocker store-bought frosting tubes and orange sanding sugar to keep the decorating easy. Many of you are like me, easily intimidated by cookie decorating. So, I know many of you will like how simple my version is.

Easy Cut Out Pumpkin Cookies.

My kiddos LOVE these pumpkin-shaped cookies. Since they are similar to a roll-out sugar cookie but, with added pumpkin spice, they are cute for kids lunchboxes or a Thanksgiving dessert. They would even be a great addition to a bake sale or cookie exchange.

I used individual fall spices for my cookie dough because I didn’t have a batch of Homemade Pumpkin Pie Spice made. Feel free to use all of them separately or make a batch of Pumpkin Pie Spice.

The pumpkin spice cookie dough comes together quickly and requires just a few minutes of refrigeration. So, they can be baking in your oven quite quickly. The result is a soft and crispy pumpkin flavored cookie.

These Cut Out Pumpkin Cookies are great with frosting and decorations or without. There is no need to decorate them because they are delicious plain too!

I mentioned that I used store-bought prepared frosting tubes. If you have time and food colorings or gels on hand, you could make homemade or even a royal icing. I added extra color with orange sanding sugar. You can find both of these items in the baking aisle at your grocery store. I like to keep these cookies quick with no fuss.

Ingredients for Pumpkin Cut Out Cookies

  • Pumpkin Puree
  • Flour
  • Sugar
  • Brown Sugar
  • Baking Powder
  • Egg
  • Milk
  • Butter
  • Vanilla Extract
  • Cinnamon
  • Nutmeg
  • Ginger
  • All Spice
  • Optional Homemade or store-bought Frosting

How to make Cut Out Pumpkin Cookies

First, combine flour, baking soda, and spices in a medium-sized bowl. Then, whisk until combined well.

Next, cream the softened butter with a hand electric mixer until creamy. I use a large bowl for this step.

For the next step, add the sugars and mix well.

Then, add the egg, vanilla, and pumpkin. Mix to combine all the ingredients.

Gradually add in small amounts of the flour mixture at a time until all is added.

Then, separate the dough in half. Flatten into disks and place between plastic or a zippered bag. And refrigerate for 15-30 minutes.

Next, preheat the oven to 350 degrees. Roll the dough thin and use cookie cutters to cut out the cookies. Finally, bake cookies on ungreased baking sheet for 9-11 minutes. I like to look for browning around the edges.

Transfer the pumpkin cookies to a wire rack to cool completely. Then, decorate or enjoy as is.

Easy Cut Out Pumpkin Cookies

Cook: 11 minutes
Servings: 24 cookies

Ingredients 

  • 3 1/4 cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/4 tsp Ginger
  • 1/8 tsp Nutmeg
  • 1/4 tsp Allspice
  • 1 cup Butter
  • 2/3 cup Sugar
  • 1/3 cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1/4 cup Pumpkin Puree

Instructions 

  • Combine flour, baking powder and spices in a large bowl. Whisk to combine. Set aside.
  • Beat the butter until smooth.
  • Add sugar and brown sugar. Beat until fluffy.
  • Add pumpkin, egg and vanilla. Beat until incorporated.
  • Scrape down sides of the bowl.
  • Gradually add flour mixture while beating at low speed.
  • Continue beating until incorporated and dough is pulling into a ball.
  • Place dough ball on clean work surface and kneed until you have a neat ball.
  • Divide in half, flattening into a disk and place in plastic.
  • Refrigerate for 30 minutes.
  • Preheat oven to 350.
  • Lightly flour a work surface.
  • Roll out dough and cut into pumpkin shapes.
  • Place on ungreased baking sheet and bake 9-11 minutes (slight browning of edges).
  • Allow to cool completely before decorating.
