This CopyCat Taco Bell Mexican Pizza Recipe is sure to save you some $$’s. After college I worked for Taco Bell for about 2 years. One of my favorite menu items was the Taco Bell Mexican Pizza. Oh my yummy! Back in those days Taco Bell still added olives and also cut the pizzas for you. Wow, those were the days ha ha! This past week the kiddos were begging to take a trip to Taco Bell and I decided I would save some money and make them CopyCat Taco Bell Mexican Pizza at home.

The one thing I always liked about Taco Bell was that the meat was always so fine. No HUGE chunks of meat. I am not sure if it is a mental thing with me or what, ha ha! The smaller the meat, the more flavor I taste. To get the same small pieces of ground beef, I just popped my cooked meat into the food processor. WOW, this stuff came out PERFECT.

My kiddos and hubby all love when we have Mexican food for dinner. Many times we have cooked big Mexican dinners and everyone always just wants tacos, ha ha.

Making this CopyCat Taco Bell Mexican Pizza Recipe at home is so simple. Taco Bell mexican Pizzas are not on the value menu so you will most likely save by making your own at home. Just grab yourself some Taco bell refried beans and seasoning fromt he grocery (Meijer quite often has sales on Taco Bell Items).

INGREDIENTS
1/2 lb Ground Beef
1/2 package Taco Seasoning Mix
2 tbsp Water
8 White Corn Tortillas
16 oz Refried Beans
1/3 cup Enchilada Sauce
1/3 cup Thick and Chunky Salsa
1 cup Shredded Cheddar Cheese
1 cup Shredded Monterey Jack Cheese
1/4 cup diced Tomatoes
1/4 cup slice Green Onion (green end)
1/4 cup Sliced Black Olives 
Vegetable Oil for Frying

DIRECTIONS
Brown ground beef in a skillet.
Drain excess fat.
Add water and taco seasoning. Mix well.
Allow to simmer for 10 minutes on low.
Remove from heat.
Transfer taco meat to food processor and run until it is a fine consistency.
Heat Oil to 375 on stovetop.
Fry each tortilla for 30-45 seconds on each side and set on paper towels or paper bag to drain.
Preheat oven to 400.
Spread 1-2 tablespoons of beans on 4 tortillas.
Top beans with the meat mixture.
Top each of these with the remaining tortillas.
Top these tortillas with a blend of enchilada sauce and salsa.
Next add a mixture of the cheeses.
Then top with tomatoes and olives.
Optionally add green onion slices.
Bake in oven for 5-10 minutes or until cheese is melted.

Layer on your ingredients and then melt the cheese to have yourself a perfect Copycat Taco bell Mexican Pizza.

I realized I was working so quickly to get pictures done and feed the kiddos that I forgot to add on the green onions for my pictures. I always request extra green onions when I head to Taco bell for a Mexican pizza. At home, I loaded my Mexican Pizza with quite a few green onions… yum!
