Caramel Apple Cider Cookies

These Caramel Apple Cider Cookies make for a perfect fall cookie. You will find great apple cider flavor and a gooey caramel filling stuffed right in the middle. All the apple flavors packed into one delicious cookie.
Caramel Apple Cider Cookies
With fall and back to school just around the corner, I know I will be making lots of great apple desserts. I have already shared quite a few with you so far. If you have yet to checkout my Caramel Apple Pie Cookies, I suggest you do so… They come highly recommended by the entire family.
My kiddos pack their school lunches and cookies are the easiest thing to make in large batches to have ready for their lunchboxes. I can save quite a bundle by making homemade cookies instead of purchasing store bought.
Caramel and apples are meant to be together, kind of like peanut butter and jelly, ha ha. The apple cider flavors and caramel come together so perfectly in these tasty Caramel Apple Cider Cookies. The caramel found right in the middle is gooey but combines with the cookie so well that the ratio is spot on.
Not many ingredients are needed for these yummy cookies. To achieve the Apple Cider flavoring you will need to purchase Alpine Spiced Apple Cider in the Original Flavor. You can find the mix near the hot chocolate in your grocery store. My Kroger even carries a Kroger brand. You will also need a bag of Kraft Caramels and some simple items you most likely already have on hand. The recipe is quite simple and comes together quickly.
INGREDIENTS
1 cup softened Butter
1 cup Sugar
1/2 tsp Salt
1 box (10 packets) Alpine Spiced Apple Cider Instant Drink Mix
2 Eggs
1 tsp Vanilla
1/2 tsp Cinnamon
1 tsp Baking Soda
1/2 tsp Baking Powder
3 cup Flour
11 oz Kraft Caramels (about 40)
DIRECTIONS
Preheat oven to 350.
Line cookie sheets with parchment paper or silicone mat.
Cream together butter, sugar, salt and all 10 packets of apple cider mix until fluffy.
Beat in eggs, cinnamon and vanilla extract.
Whisk together baking soda, baking powder and flour in another bowl.
Beat in flour mixture until just combined.
Spoon out 2 tablespoons of dough into a ball.
Flatten and place a caramel into the middle and seal dough around it.
Place about 2-3″ apart on prepared sheet.
Bake 12-14 minutes or until lightly brown around edges.
Gently slide the parchment with the cookies onto the counter.
Allow to cool until they firm up but are slightly warm.
Gently twist to remove from sheet and flip to finish cooling upside down on the parchment paper.
I am super anxious to make a few batches of these Caramel Apple cookies as a dessert for my next girls get-together. I know they will be a hit this fall.
