-
Garlic – Jarred minced garlic works fine.
-
Ground Beef – Feel free to mix things up here! If you want to make things a little healthier and leanier, use some ground turkey. Want a bit of extra heat? Go with some andouille or spicy sausage.

-
Beef Stock / Beef Broth
-
Diced Tomatoes – Canned diced tomatoes will work here.
-
Rice – Go with a long grain rice like basmati or jasmine for this recipe.
-
Cheddar Cheese – Or any other cheese you’d like to top with. Maybe a pepperjack or Monterey jack cheese?
How to make Unstuffed Peppers
-
Cook onion and garlic over medium heat before adding ground beef. Brown and drain off excess fat.
-
Add peppers, tomatoes, beef stock, rice, and seasoning before bringing to a boil then reducing to a simmer.
-
Cover and let cook for about 20 minutes or until rice is cooked through. Fluff rice, top with cheese, and cover to melt cheese. Serve warm.
Dice your onions before tossing into a pan with your garlic. Cook over medium heat for a few minutes until onions are translucent and garlic is fragrant then add in ground beef.
Crumble the ground beef in the pan and brown through until no pink remains. Drain off any excess fat before returning to the stovetop.
Now we’ll add in most of the remaining ingredients. First, dice the bell peppers and add them in.
Then the tomatoes- no need to drain-, beef stock, rice, and Italian seasoning.
Give that a quick mix to combine then bring to a boil. Once boiling, reduce to a simmer, cover and let cook for about 20 minutes. When it’s done, fluff the rice before moving on.
All that’s left is to top with cheese. Grate your cheese and top the stuffed pepper skillet generously.
Cover the skillet once again and reduce the heat to low to melt the cheese.
When the cheese topping has melted, your Unstuffed Peppers are ready to go- we added a little parsley garnish for extra color. Serve up while it’s still warm and enjoy!
