Unstuffed Peppers

It’s always great whenever ground beef goes on sale! We’ve got plenty of ground beef recipes we love to make for easy weeknight dinners throughout the week. We’ll post a few down below, but today we wanted to focus on a new recipe we’ve tried recently and really liked. Instead of baking up some stuffed peppers, we decided to grab a skillet and make some Unstuffed Peppers.

Making Stuffed Peppers in a Skillet helps you keep all those delicious flavors from the classic recipe without a lot of the extra work. No need to steam your peppers, use tons of aluminum foil, et cetera. Instead, you get to use one pan and you can easily cook everything in less than an hour! You still get fluffy rice, melty cheese, and tender cooked peppers. Unstuffed Peppers are just a bit easier.

Ingredients for Stuffed Pepper Skillet

  • Onion – White or yellow onions will work best here.
  • Garlic – Jarred minced garlic works fine.
  • Ground Beef – Feel free to mix things up here! If you want to make things a little healthier and leanier, use some ground turkey. Want a bit of extra heat? Go with some andouille or spicy sausage.
  • Bell Peppers – It wouldn’t be Unstuffed Peppers without some peppers in there! We like to use a blend of colors to keep the dish looking fresh and bright.
  • Beef Stock / Beef Broth
  • Diced Tomatoes – Canned diced tomatoes will work here.
  • Rice – Go with a long grain rice like basmati or jasmine for this recipe.
  • Italian Seasoning – Don’t have any on hand? Make some yourself using our Italian Seasoning recipe!
  • Cheddar Cheese – Or any other cheese you’d like to top with. Maybe a pepperjack or Monterey jack cheese?

How to make Unstuffed Peppers

Making this pan of Unstuffed Peppers is very easy. Here’s all you have to do:
  1. Cook onion and garlic over medium heat before adding ground beef. Brown and drain off excess fat.
  2. Add peppers, tomatoes, beef stock, rice, and seasoning before bringing to a boil then reducing to a simmer.
  3. Cover and let cook for about 20 minutes or until rice is cooked through. Fluff rice, top with cheese, and cover to melt cheese. Serve warm.

Dice your onions before tossing into a pan with your garlic. Cook over medium heat for a few minutes until onions are translucent and garlic is fragrant then add in ground beef.

Crumble the ground beef in the pan and brown through until no pink remains. Drain off any excess fat before returning to the stovetop.

Now we’ll add in most of the remaining ingredients. First, dice the bell peppers and add them in.

Then the tomatoes- no need to drain-, beef stock, rice, and Italian seasoning.

Give that a quick mix to combine then bring to a boil. Once boiling, reduce to a simmer, cover and let cook for about 20 minutes. When it’s done, fluff the rice before moving on.

All that’s left is to top with cheese. Grate your cheese and top the stuffed pepper skillet generously.

Cover the skillet once again and reduce the heat to low to melt the cheese.

When the cheese topping has melted, your Unstuffed Peppers are ready to go- we added a little parsley garnish for extra color. Serve up while it’s still warm and enjoy!

How long does Stuffed Peppers in a Skillet last?

If you’ve got any leftover Unstuffed Peppers, we recommend moving to an air-tight container and keeping in the fridge. Kept in there, they’ll last a good 4-5 days. For longer term storage, keep in the freezer for up to 3 months. To reheat, let thaw overnight then either microwave, reheat on the stovetop, or transfer to a casserole and bake like a Stuffed Pepper Casserole.

Unstuffed Peppers

Unstuffed Peppers are an easy weeknight dinner just like stuffed peppers. This stuffed pepper skillet recipe is a super easy skillet meal!

Cook: 30 minutes
Total: 42 minutes
Servings: 6 servings

Ingredients 

  • 1 lb Ground Beef
  • 1 small Onion, diced
  • 1 tbsp Minced Garlic
  • 1/2 cup Green Bell Pepper, diced
  • 1/2 cup Red Bell Pepper, diced
  • 1/2 cup Yellow Bell Pepper, diced
  • 28 oz can Diced Tomatoes
  • 3/4 cup White Rice
  • 1 3/4 cup Beef Broth
  • 1 tbsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 cup Shredded Cheese
  • 1 tbsp Parsley, chopped (optional)

Instructions 

  • Toss onions and galic in a large skillet over medium heat for a couple of minutes until onions are translucent.
  • Crumble ground beef into the pan and cook until no longer pink.
  • Drain excess fat.
  • Add diced peppers, diced tomatoes, rice, stock, italian seasoning, salt and pepper. Stir to combine.
  • Bring to a boil, reduce heat back to medium, cover and simmer for 20 minutes.
  • Uncover, stir and fluff rice.
  • Top with cheese.
  • Reduce heat to low and cover to melt cheese.
  • Garnish with chopped parsley if desired.
