Apple Overnight French Toast Casserole

This Apple Overnight French Toast Casserole makes it easy to serve a crowd a filling breakfast. It’s filled with diced apples and a delicious brown sugar cinnamon streusel topping. Since it is made ahead of time and baked, it is great for Thanksgiving or Christmas breakfast or brunch.
Apple Overnight French Toast Casserole
I have a large family, so making breakfast recipes for this large crew can always be a challenge, especially on holiday mornings. For Easter breakfast, I usually make Bananas Foster French Toast Casserole. But for Thanksgiving and Christmas, I like to serve French Toast Cups or this Apple Overnight French Toast Casserole.
Making a breakfast casserole ahead of time is so easy. The prep time for Apple French Toast Casserole is relatively quick. You can have this dish soaking overnight in no time at all.
Cinnamon and apple flavors are so comforting and are perfect for the holidays. When I have my casserole baking, the house always smells amazing.
Baked French Toast Casseroles are always popular with my family and with guests. I serve maple syrup alongside for some added sweetness. With or without syrup, this breakfast casserole is delicious!
Why is my French Toast Casserole Soggy?
For the best results, you will want to use bread that is least a day old. Crusty bread will soak the custard without allowing it to become too soggy. If you need to get the bread crusty quickly, toss it in a 200-degree oven for a few minutes to crisp.
Ingredients to Make Apple Overnight French Toast
- Apples
- French Bread Loaf
- Eggs
- Milk
- Half and Half
- Butter
- Vanilla Extract
- Cinnamon
- Nutmeg
How to Make Overnight French Toast Casserole
First, heavily grease or butter a 9×13 baking dish. Then, cube the sliced bread. Older bread works best for this french toast recipe.
Next, core, peel, and dice the apples. I used a Granny Smith but, you could use any variety of apples.
In a large skillet melt the butter. Add brown sugar, cinnamon, and vanilla. After the mixture thickens, add diced apples and stir to coat. Set the apple mixture aside and allow to cool.
Beat eggs in a large bowl. Then, add brown sugar, cinnamon, and vanilla. Beat well. Next, add the milk, half and half, and nutmeg. Whisk well. Add bread crumbs to the egg mixture and coat well.
Add the bread cubes mixture to the prepared casserole dish.
Next, top with apple mixture.
Cover and refrigerate overnight.
When ready to bake, remove from the refrigerator and uncover — pre-heat oven to 350 degrees.
Bake for 35 minutes.
When the breakfast casserole is baking make the streusel topping. Add the flour, brown sugar, cinnamon, and nutmeg to a small bowl. Whisk to combine. Then with two forks or a pastry cutter, cut in the butter. When pea-sized pieces are present, the streusel is perfect for topping.
Add the topping and bake for another 25- 30 minutes.

Ingredients
CASSEROLE
- 1 loaf French Bread
- 1 stick Butter
- 1 1/2 cup Brown Sugar, divided
- 2 tsp Cinnamon , divided
- 3 tsp Vanilla Extract , divided
- 4-5 Apples , small - peeled cored and diced
- 8 Eggs
- 1/4 tsp Nutmeg
- 1 cup Half and Half
- 1 cup Milk
STREUSEL TOPPING
- 3/4 cup Flour
- 3/4 cup Brown Sugar
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/2 cup Butter, cut into pats
Instructions
- Grease 9x13" baking dish. Set aside.
- Cut bread into cubes and set aside.
- Melt butter over medium high heat in large skillet until melted.
- Add 3/4 cup brown sugar, 1 teaspoon cinnamon and 1 teaspoon vanilla.
- Stir until mixture thickens a little, then add apples and stir until coated.
- Remove from heat and set aside (let cool).
- In a large bowl, beat eggs.
- Beat in remaining brown sugar, cinnamon and vanilla.
- Add nutmeg, half and half and milk.
- Whisk until blended.
- Add bread cubes and gently stir until bread has soaked up liquid.
- Pour bread mixture into prepared baking dish.
- Pour apple mixture over bread mixture.
- Cover with plastic wrap and refrigerate overnight.
- Preheat oven to 350.
- Remove plastic wrap and bake for 35 minutes.
- In a bowl whisk together flour, cinnamon, nutmeg and brown sugar for streusel.
- Cut in butter using a fork until crumbly.
- Sprinkle mixture over top of baking dish.
- Return to oven for 25-30 minutes until streusel is browned.
I just made this and it’s delicious! I used one 14oz loaf of French bread from Walmart. Used my food processor to make streusel. Could use a little more streusel.
A loaf of French bread is too vague. It would be helpful to be more exact, like the weight of the French loaf in grams. Having to guess at how much to use can cause a recipe to fail and ingredients wasted.
Thank you for the recipe! I made this last night for Easter morning breakfast. It came out great. The only thing I had to change was the bread… couldn’t get my hands on a loaf of French bread so I used plain sliced white bread and toasted it for a few minutes in the oven before cubing it. I’m sure french bread would have been better but this was still great!

Loaf of French bread. Possibly give a measurement like # of cups of cubed bread since loaves vary in size?
