Meatball Sub Casserole

Quick and easy weeknight meals are a must at our house. With a child in elementary school, one in high school, two in college, and one who works days can be quite hectic for us. This Meatball Sub Casserole is such a quick and easy dinner. I toss it in the oven and make a big tossed salad for all of them to enjoy.

Sometimes, I use leftover Slow Cooker Homemade Meatballs. Other times, I use store bought because I found a great sale. You can use store bought spaghetti sauce. I will often use leftover Slow Cooker Spaghetti Sauce if I have any.

I love that I have no mess to clean up after serving this Easy Meatball Sub Casserole. I make the entire dinner and have very little cleanup. I have never taken this one to a pot luck but I bet it would work well if you keep the dish tented with aluminum foil and heat just before serving. If you try it, be sure to let me know.

Sandwiches are great for feeding my crew. I make meatball subs often because we all love them. I serve them with chips usually. Making 7 subs though definitely requires more work and space in my oven. That’s why this casserole is great for busy nights.

Super simple ingredients are all that you will need. I find frozen store bought meatballs on sale often. They work perfect for this casserole dish. You can have this dish done and ready to serve in no time at all.

INGREDIENTS
15 Grands Juniors Flaky Biscuits
25-30 small frozen Meatballs (a little less than 2 lbs)
24 oz Spaghetti Sauce
3 tbsp Butter
1/2 tsp minced Garlic
1/2 tsp Oregano
1 tbsp Parmesan Cheese
8 oz Shredded Mozzarella

DIRECTIONS
Preheat oven to 350.
Place meatballs in bottom of 13×9″ baking dish.
Cover with spaghetti sauce and bake for 15 minutes.
Put butter, garlic, oregano and parmesan in a microwave safe bowl.
Heat for 50 seconds and stir to combine. Set aside.
Sprinkle Mozzarella cheese over heated meatballs and top with biscuits.
Brush biscuits with butter mixture.
Raise temperature to 400.
Bake for 10 minutes until biscuit tops are golden brown.
Tent with aluminum foil and bake for 10-15 more minutes until biscuits are cooked through (not doughy).
Note: different biscuits and different ovens will vary the cooking time on. Different biscuits cook quicker, some slower. If you need this to be a speedy casserole, I suggest cutting the biscuits in half to reduce cooking time.

  1. Yum I’m making this, but I’ll make some grass fed meatballs and biscuits with unbleached flour, but I’m sure I have lots more time than most people, I’m sure it will taste great! Thanks for the recipe
