Slow Cooker Vegetable Beef Soup
We are a soup sort of family. All year long, we like to enjoy soup for dinner. In the summer, we will enjoy soup paired with a salad and during the fall and winter months, we like to enjoy our soup with bread. Soup is great year round but when fall and winter arrive, I like to bust out my crock-pot and whip up a big batch of soup that I know we can eat for a couple of days. Slow cooked soup seems to get better the longer it cooks.
Vegetable beef soup is one of my family’s favorite soups. They love when I make a big batch of Slow Cooker Vegetable Beef Stew or when I make this super delish Vegetable Beef Soup. Perfect for warming up on a cold day.
My kiddos can be picky about eating their vegetables. When I load them in a soup, casserole, or stew, they do not complain much. I will find a few peas in the bottom of one of their bowls, green beans in another, haha. But in general, they will actually eat the veggies when they are immersed in a sauce or broth.
Making soups in the slow cooker is so easy. I usually brown off my meat a bit before adding it to the Crock-Pot. but, you can actually skip that step if you are pressed for time. Dropping everything in the slow cooker and then letting it cook all day makes for the most tender meat and veggies.
If you are a fan of Vegetable Beef Soup, this recipe will become one of your favorites. With just a package of beef, veggies, broth, and a few seasonings you can have this one cooking in no time at all.

How to Make Vegetable Beef Soup in the Slow Cooker
First, add the seasonings to the cubed beef. Then add oil to a skillet and place the heat on medium. Add seasoned beef. Brown all sides and transfer to a CrockPot. I used a 6-quart CrockPot. I am sure a 5-quart version would work well too!
Now, add the mixed vegetables, tomatoes, beans, onions, bay leaf, garlic, season salt, and beef brother. Stir all of the ingredients together and place the lid on the slow cooker. Cook for 8-10 hours on high or 4-5 hours on low. Remove bay leaf and enjoy.
Cook for 8-10 hours on high or 4-5 hours on low. Remove bay leaf and enjoy.
I made this vegetable soup for dinner and then we also enjoyed it for our lunches for the past two days. The longer it cooks, the more flavor it has so, the leftovers will be even more delicious. Do you have a favorite slow cooker soup you enjoy during the fall and winter months?

Delicious looking recipe, but shouldn’t it say 8-10 hrs on low and 4-5 hrs on high? Those instructions are reversed in the recipe. Thank you.
I believe the cooking times are incorrect. Should be switched around.
You have a nasty ad that cannot be closed smack over the recipe! Makes the recipe very hard to see, and far too difficult to use. Ads should be on the right hand side, where they are not obstructing content.
Easy and delicious! I cook for two, so made half the recipe in my small slow cooker. It was perfect for dinner (with cheddar biscuits), then had enough leftover for lunch.
I started making this soup at noon on a Friday. Mid afternoon I had a lot of my family stop in to visit and they all wondered what I was making I my crock pot. I told them I was trying this new recipe for vegetable soup. The end of my story is the familly is gone and so is my soup. It’s the best!!!! Now Im going to make it again so I can have more of it!
That sounds like a perfect afternoon to me. There is nothing better than family dropping in for food/drink. I am happy to hear everyone enjoyed it, it’s one of my husband’s favorites. Thanks much for trying and rating the recipe, it is much appreciated. Have a wonderful week.
This definitely is the best soup by far. I liked it so much I passed it on the my sister and she passed it on again and again…soooooooo good.
Yummy!! Made it tonight! Thank you for the brightness of the veggies! So easy.

The soup was ok, but I had to add some Beef Better Than Bouillon. Just didn’t taste right without the added beef flavor. And I regret using the Seasoned Salt. Gave the soup a weird smell. Oh well, next time I’ll omit it.
I had to add 2 tablespoons of better than
Bouillon it’s a paste in a jar after
Adding it the soup was delicious.
There is a mistake in your recipe. Check the cook time. You put “cook on high for 8_10 hours on high or 4_5 hours on low.”. It was delicious! Thank you.

Love this recipe! It’s super easy to make and very delicious!
Reminds me of my Grandmother’s vegetable beef soup. Like a hug in a bowl. My husband loves it too. Thank you!
This was so easy and turned out amazing!
Would it make a big difference if I used sweet potatoes instead of red potatoes?
Hi Brittney! I have not tried sweet potatoes with this soup recipe. But, I bet it would be delicious. Let us know if you give it a try.
I’ve added diced sweet potatoes and it’s wonderful!
Never mind. My eyes must have been crossed.
They are mixed up in the top part, but correct in the recipe itself. Your eyes are good!
I’ve made this yummy soup several times. However, I just realize you have the times for cooking backwards for high and low settings. Lol
Very good and really simple to make! I used a chuck roast that I had and used 2 bags of simply potatoes that were diced. My husband loved it!
Super easy & tastes great! I substitute canned diced potatoes(drained) & frozen chopped onions which makes it even easier
I want to double this vegetable beef soup recipe and would like to know what size crockpot I’ll need..
Thanks
