This Quick & Easy No Cook Potato Salad Recipe is my favorite quick and easy salad to make during the spring and summer. Time for cooking is always an issue during the warmer months of the year. We always seem to be on the go doing something. I am always looking for ideas on how to make our meals much quicker. We tend to grill hot dogs, chicken, burgers and Metts on the grill. We also use our new smoker we purchased last year quite a bit. We like to eat salads and fresh fruit as a side with our summer meals.

Being in the kitchen cooking during the summer is just too much. I always get over heated. Cooking becomes a chore when we are wanting to be out enjoying the arm weather.

For years when we were pressed for time we would pick up store bought potato salad to have as a side with our grilling meals. Problem was that we always had to add in some extra items to make it taste the way we liked it. The hubby came up with a great idea and decided to give canned potatoes a test run in a potato salad. We whipped up a batch of yummy potato salad with canned potatoes and IT WORKED. The potato salad came out perfect and required no boiling of potatoes, peeling potatoes or dicing. I was so excited as we could now make potato salad at home quickly with no cooking at all. I grab my pre-bolied eggs in a package in the deli area at Kroger or also you can usually purchase them from the salad bar for cheaper. Toss in your favorite veggies (I like to buy vegetables pre-diced from the salad bar too) and mayo or miracle whip and have a semi homemade potato salad in just minutes.

Quick and Easy No Cook Potato Salad Recipe 3

INGREDIENTS
2 15 oz cans Whole Potatoes
1/2 cup Miracle Whip or Mayonnaise
1/4 cup Sweet Pickle Relish
2 tbsp Mustard
1/2 cup diced Celery
1/4 cup diced Red Onion
1/4 cup diced Green Pepper
3 diced Hard Boiled Eggs
Salt & Pepper (to taste)
Paprika (garnish)

Potato Salad Recipe

DIRECTIONS
Cube potatoes and add to large bowl.
Add all remaining ingredients (except paprika) and stir to mix well.
Garnish with paprika.
Refrigerate until ready to serve.

Quick & Easy No Cook Potato Salad Recipe

Ingredients 

  • 2 15 oz cans Whole Potatoes
  • 1/2 cup Miracle Whip or Mayonnaise
  • 1/4 cup Sweet Pickle Relish

  • 1/2 cup diced Celery
  • 1/4 cup diced Red Onion

Instructions

    Excellent tasting potato salad. I was hesitant on using canned potatoes but, the recipe turned out great. I used 6 cans of potatoes so added more mayo and a little more mustard, much more vegetables and added chopped radish. The taste is excellent. Great recipe idea. Saved allot of time not having to peel and cook potatoes. Thanks for sharing recipe.

  2. You can buy chopped veggies and eggs from the deli? Wow…..is this only at Kroger? Who do you ask for this…..this will be a game changer if I can figure out where to get this! I already use can potatoes for many things…..Use em for making beef stew at deer camp…..makes putting that together a lot easier!

    1. Hi Jo! Yes, the pre-boiled eggs and prechopped veggies are available at most grocery stores now. Give a look around or ask someone in the deli area where the eggs are located, they should be able to assist.The canned potatoes are so useful for so many recipes. I like to keep them stocked in the pantry. So much easier than peeling and boiling, waiting for them to cool, etc. I hope you have a great day-Jen

      That was petty. If The hubby, hubs or hubster doesn’t have a problem w/ it then so be it.
      As for the recipe this is something I’d been wanting to try. I give it 3 stars. It was good enough to keep from having to go thru the hassle of peeling, cutting & cooking, but the diy way does taste better. Thanx for posting this.

  7. How many servings is this and what is the serving size? Need the info to figure out weight watcher’s points.

    1. Hi you probably already know by now, but I used 2 cans of potatoes & I used Kraft Light Mayo. It equaled 5 1 cup servings for 2 points on purple plan. You can always plug in the ingredients and amounts in the WW app to get your points for your plan

  8. I tried this but left out the celery because that would require a trip to the store! It turned out great. I used Dijon mustard and dill relish! Threw in a little bit of dry ranch dressing and a TBS of sour cream. I guess I didn’t follow your recipe too closely but used it more as suggestions. We loved it!
