My Mini Pineapple Upside Down Cakes are one of our favorite desserts. I make them quite frequently because my whole gang enjoys them. Who doesn’t like an upside-down cake?

Since fall will be here very soon, I decided to make up an apple version of those tasty mini upside-down cakes. I tossed in apples instead of pineapples and added some cinnamon and nutmeg with the topping for a fall inspired sauce.

These Mini Apple Upside Down Cakes are perfect for fall gatherings. You can enjoy them as is or with additional toppings. I think they were great just plain. But we did add on some store bought caramel (you can use Homemade Caramel Sauce) and chopped peanuts to kick them up another notch.

During the fall months, I am constantly making apple and pumpkin desserts. The house always smells so amazing and my family is always so thankful for comforting after dinner desserts.

Since this recipe uses a store bought cake mix, it comes together so easily. I love saving time. I did add some diced apples as well as some additional cinnamon and nutmeg. Those additions made the cake part so much better.

INGREDIENTS
5 Medium Apples (I used Granny Smith)
1 box Spice Cake Mix
3/4 cup Water
1/2 cup Vegetable Oil
3 Eggs
2/3 cup melted Butter
1 1/4 cup Brown Sugar
1/2 tsp Nutmeg
1/2 tsp Cinnamon

DIRECTIONS
Preheat oven to 350.
Core and slice apples into rings.
Pick about 20 slices and cut into quarters.
Dice remaining apple rings qnd set aside.
Spray muffin pan with non stick spray or grease.
In a medium bowl, combine melted butter, cinnamon, nutmeg and brown sugar and stir until blended.
Spoon 2 teaspoons of butter mixture into each cup.
Place apple ring quarters in a circle around bottom.
Combine cake mix, oil, eggs and water in a bowl and beat on low until incorporated.
Fold in diced apples.
Fill each cup 2/3 full with batter.
Bake 20-25 minutes or until toothpick inserted in center comes out clean.
Allow to cool in pan for 5 minutes.
Run a butter knife around edges of each cup and invert onto baking sheet to remove cupcakes.

Ingredients 

  • 5 Medium Apples, I used Granny Smith
