Since warm weather has arrived you may be needing this Quick & Easy Strawberry Pie Recipe. We are constantly looking for quick and easy desserts to throw together for grill outs. Spring and summer always have me anxious for great strawberry desserts. I shared a few strawberry recipes this past week like the yummy CopyCat Starbucks Strawberry Frapp, Strawberry Shortcake Cookie Cups and the yummy Strawberry Shortcake Popsicles. All have been a hit in our house.
Quick & Easy Strawberry Pie Recipe
On Saturday we met up with some friends for a quick get together after dinner and I was needing to bring along a quick and easy dessert. This Strawberry Pie Recipe was perfect. Quick, Easy and tasty!
Do you find yourself in a bind during the warm months looking for a dessert that does not take much time or heat up your whole home? You are really going to run to this recipe over and over.
The strawberries and Cool Whip blend so well together and the Jell-O adds that additional punch of flavor. I used a store bought graham Cracker Crust to save on time. You could also make your own too!
INGREDIENTS
1 package Strawberry Jell-O
2/3 cup Boiling Water
4 Ice Cubes
8 oz Cool Whip
1 cup sliced Strawberries
1 cup diced Strawberries
1 Graham Cracker Crust
DIRECTIONS
Mix Jell-O and boiling water in a medium bowl. Stir until Jell-O is dissolved.
Add ice and stir until Jell-O cools and begins to thicken.
Whisk in Cool Whip to incorporate and then add diced strawberries.
Spoon mixture into crust and refrigerate for at least several hours.
Top with whipped cream (optional) and sliced strawberries before serving.
This Quick & Easy Strawberry Pie Recipe was so simple and perfect for our get together. It was finished off pretty quickly. This Strawberry Pie just put me in a wonderful mood. So bright in color and yummy too! I know I will be making it many times this spring and summer.

I made this pie according to directions and was great. I then got experimental. Instead of water I used the juice from the fruit I choose or 1/4 c water with whole fruit pulverized in a food processor, like blackberries, raspberries and such. This added a awesome burst of flavor to the jello mix and the pie was fantastic. So far I have done this with Strawberries, Blueberries, Raspberries, Mandarin Oranges, Blackberries, Peaches, and Pineapple. Gonna try Lemon, Lime and then maybe mixed fruit yet.
I was wondering when you make the lemon lime how are you going to do that
My mom always made this but instead of crust she put an angel food cake in the middle , an old Tupperware recipe. Or you could tear up the angel food cake and put in the middle yum. Great recipe.

I have made this pie for years. My recipe calls for 2/3 cup ice, I think. HA!! I also put cool whip on top just for looks. This is one of the best pies I have ever made. I also make it peach. YUM!!
