If you are bored with just plain chicken you can kick it up a notch with this over the top delish Pepper Jack Chicken with Bacon Recipe. A grilled or sauteed chicken breast loaded with peppers, onions, BBQ sauce, pepper jack cheese and BACON! We have been on a big chicken kick since the new year started. I was tired of just plain old chicken. So we kicked up these chicken breasts. They were loaded with great flavor and the toppings just all blend so well making this dish just melt in your mouth. Just a bit of spice and the crispy bacon really added to the deliciousness.

Pepper Jack Chicken with Bacon

I made another batch of our CopyCat Texas Roadhouse Rolls and a quick frozen veggie for a perfect and easy meal. I left off the peppers and onions for a couple of the kiddos but the others loved all the toppings. YUM!

Pepper Jack Chicken with Bacon- Kick up your chicken breast loaded with peppers, onions, BBQ sauce, pepper jack cheese and BACON!

Grab yourself some chicken breasts, peppers, onions, BBQ sauce and some yummy bacon! This chicken will be melt in your mouth goodness.

Pepper Jack Chicken with Bacon- Kick up your chicken breast loaded with peppers, onions, BBQ sauce, pepper jack cheese and BACON!

INGREDIENTS
2 lb Boneless Skinless Chicken Breast
6 slices Bacon
1 tsp minced Garlic
1/4 cup flour
Salt and Pepper to taste
4 tbsp Barbecue Sauce
4 oz Pepper Jack Cheese
1 cup Multicolored Peppers, cut into strips
1/2 cup Onions, cut into strips

Pepper Jack Chicken with Bacon- Kick up your chicken breast loaded with peppers, onions, BBQ sauce, pepper jack cheese and BACON!

DIRECTIONS
Spray a baking dish with nonstick spray.
Preheat the oven to 375.
Fry bacon until cooked but not crisp.
Drain bacon.
Remove most of bacon grease leaving 1-2 tablespoons in skillet.
Sautee peppers, garlic and onions over medium heat until tender.
Remove vegetables and set aside.
Split chicken breast halves to a thickness of about 1/2″.
Dip each piece in flour.
Season with salt and pepper.
Cook chicken in the skillet over medium heat for about 5 minutes per side side, until cooked through.
Arrange the chicken breasts in prepared dish.
Spread barbecue sauce over each chicken piece.
Top with peppers and onions.
Cover each with cheese and top with bacon.
Bake for 6-7 minutes, until cheese is melted.
