Pecan Snowball Cookies

These Pecan Snowball Cookies are a Classic Christmas Cookie that is so easy to make. They are soft, buttery, dense and melt in your mouth. Just like grandma use to make!

Ingredients

  • 1 cup Butter softened
  • 1 cup Powdered Sugar divided
  • 1 tsp Vanilla Extract
  • 2 1/4 cup Flour
  • 1 cup finely chopped Pecans
  • 1/4 tsp Salt

Instructions

  • Line a baking sheet with parchment paper or a silicone mat and set aside.
  • Preheat the oven to 350.
  • Beat butter until fluffy.
  • Add 1/2 cup powdered sugar and beat until blended.
  • Add vanilla and beat until incorporated.
  • Add flour, pecans and salt and beat until distributed.
  • Roll into 1 1/4" balls and place on prepared baking sheet about 2 inches apart.
  • Bake for 13-15 minutes until bottoms are golden brown.
  • Allow to cool.
  • Put remaining powdered sugar in a bowl and roll cooled cookies in powdered sugar to coat.

Notes

  • Use toasted pecans if you would like a nuttier flavor.
  • Use a food processor to chop the pecans, this saves on time.
  • Do NOT over-bake. Remember your cookies will continue baking when resting after being removed from the oven. If anything, pull them too soon.
  • Roll your cookie a second time in confectioners sugar for the extra appearance and sweet flavor.
  • Be sure to consider gifting homemade cookies in a cookie tin for a special holiday gift.
