Best White Cake

This is the BEST White Cake! It has soft texture, moist crumb, sweet flavor and is easy to make from scratch. The recipe uses basic pantry ingredients (including all purpose flour). Make it for a birthday cake, baby shower, holiday parties or any day of the week.

Equipment

  • 2 8" Round Cake Pan

Ingredients

  • 3 cup Flour
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 6 tbsp Butter softened
  • 2/3 cup Vegetable Oil
  • 2 cup Sugar
  • 1 tbsp Clear Vanilla Extract
  • 1/2 cup Sour Cream
  • 1/2 cup Milk
  • 6 Egg Whites room temperature
  • 2 batch Vanilla Buttercream Frosting Vanilla Buttercream Frosting

Instructions

  • In a large bowl, whisk together flour, baking powder and salt. Set aside.
  • In another bowl, beat butter on medium low until creamy.
  • Add sugar and oil and beat until blended and creamy.
  • Add the milk, sour cream and vanilla and mix to incorporate.
  • Add about half of the prepared dry ingredients and stir until just combined, then add the remainder and stir until incorporated.
  • Scrape down sides of bowl and set aside.
  • In another bowl, use a hand mixer with whisk to beat egg whites until stiff peaks form.
  • Use spatula to gently fold whipped egg whites into batter.
  • Preheat oven to 350.
  • Grease and flour the sides of 2 8" cake pans. Cut a circle of parchment and place in the bottom of each.
  • Evenly divide batter into prepared pans.
  • Bake for 35-40 minutes until a toothpick inserted in the center of each cake layer comes out clean. Rotate pans halfway through baking.
  • Allow cake to cool for 10-15 minutes, before inverting on to cooling rack to cool completely.
  • Frost cooled cake with a double batch of buttercream frosting.

Notes

  • Be sure to thoroughly cream the butter, sugar and oil for BEST results.
  • Do not over mix when adding flour. Sometimes it is best to mix it with a spatula instead of a mixer. Only mix until white flour is no longer visible.
  • Gently fold in the egg whites. You want the air that is being added from their meringue texture.
  • DO NOT open the oven during baking. This will cause the cakes to collapse.
  • Make a batch of my Best Vanilla Buttercream Frosting and top with colorful sprinkles.
