Apple Pie Cookies

Stop buying Crumbl and make bakery style Apple Pie Cookies at home. These soft and chewy apple spiced cookies topped with apple pie filling and a delicious buttery crumb topping are so much better. Equipment

Ingredients

Cookie Dough

  • 1/2 cup Butter softened
  • 3/4 cup Sugar
  • 1/4 cup Brown Sugar
  • 1 large Egg at room temperature
  • 2 tbsp Apple Cider or concentrated apple juice
  • 1 tsp Vanilla Extract
  • 2 cup Flour
  • 1 1/4 tsp Apple Pie Spice
  • 3/4 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt

Filling

  • 1 1/4 cup Green Apple cored peeled and finely diced
  • 3 tbsp Brown Sugar
  • 1 tsp Cinnamon
  • 1/2 tbsp Cornstarch
  • 1/4 cup warm Water

Streusel

  • 1/4 cup Brown Sugar
  • 1/4 cup Sugar
  • 1/2 cup Flour
  • 3 tbsp Butter

Instructions

  • Preheat the oven to 350.
  • Line baking sheet with silicone mat or parchment paper and set aside.

Make the Cookie Dough

  • In a bowl, whisk together flour, baking powder, baking soda and apple pie spice. Set aside.
  • In a large bowl, cream the sugars and butter together until fluffy.
  • Add egg, vanilla and apple cider to sugar butter mixture and beat to combine.
  • Beat in the dry ingredients until just combined.
  • Portion dough into balls roughly 1" around and place on cookie sheet.
  • Use a teaspoon to make an indentation in the top of each. Set aside,

Make the Filling

  • Combine apples, brown sugar, cinnamon, cornstarch and water in a skillet over medium low heat. Cook until apples are tender (about 5 minutes).
  • Remove from heat and allow to cool.

Make the Streusel

  • In a medium bowl, combine brown sugar, sugar and flour.
  • Cut butter into pieces and add to dry ingredients.
  • Using a pastry cutter or fork, press butter into dry ingredients until they form a nice crumble, Set aside.

Assembly and Baking

  • Fill the indentation in each cookie with about 1 teaspoon of the filling.
  • Top with 1 teaspoon of the streusel.
  • Bake for 10-12 minutes until edges just strart to lightly brown.
  • At this time remove from oven and use a 5" ring swirled around the hot cookie to preserve the round shape.
  • Total baking time is about 12 minutes
  • Allow the cookies to cool.

Notes

  • Use room temperature butter and eggs when baking your cookies.
  • Do not overmix your cookie dough which causes a change in the texture and may cause you to have a flat crispy cookie.
  • Don't skip the crumb topping. It makes these cookies better than apple pie.
  • Do not over bake. If you like a soft and chewy cookie like Crumbl, you need to under-bake and allow the cookie to continue baking on the cookie sheet after being removed from the oven.
  • If you would like a bigger bakery style cookie, use about 3.5-4 oz of cookie dough for each cookie.
  • If you chill the dough, baking time will take a bit longer.
  • For a perfectly round cookie, immediately move a cookie or biscuit ring around the cookie to make it PERFECT!
